Description

This cheese quiche is a real delight, perfect for a Sunday brunch or a convivial dinner. I often prepare it for the end of year festivities, and it always makes a sensation! The dough, prepared at home, is crispy as desired, and the filling, rich in parmesan and emmental, is incredibly savory. A little fresh cream and milk bring an irresistible smoothness. Do not hesitate to add a pinch of nutmeg to enhance the flavors. A comforting and easy to make dish, which will please the whole family. Ideal to accompany a fresh green salad.

Ingredients (11 ingredients)

  • 3 piece eggs
  • 1 clove garlic
  • Pepper
  • Nutmeg
  • 10 cl fresh cream
  • 10 cl milk
  • 150 g butter
  • Salt or fine salt
  • 150 g parmesan
  • 200 g grated emmental
  • 250 g flour

Preparation of the dough

In the bowl of the Thermomix, pour 230 g of flour, 2 pinches of salt and 130 g of butter cut into dice. Gradually add half a glass of water while mixing. Knead for 2 Min./Stufe Kneeten. Form a ball with the dough and let rest for one hour at room temperature.

Grate the parmesan

Put 150 g of parmesan in the bowl of the Thermomix and grate for 10 Sek./Stufe 8. Set aside.

Preparation of the filling

Thermomix® Setting

Peel a clove of garlic and put it in the bowl of the Thermomix. Chop for 3 Sek./Stufe 7. Rub a pie dish with the chopped garlic and set aside.

Mixing cheeses and liquids

In the dish rubbed with garlic, mix the grated parmesan, 200 g of grated emmental, 10 cl of milk and 10 cl of fresh cream. Add 3 egg yolks, salt, pepper and add a pinch of nutmeg. Mix well.

Whisk the egg whites until stiff

Insert the whisk into the bowl of the Thermomix. Add 3 egg whites and a pinch of salt. Whisk until stiff peaks form for 3 Min./Stufe 3.5.

Incorporation of the beaten egg whites

Gently incorporate the egg whites into the cheese mixture.

Preparation and baking of the quiche

Preheat the oven to 200°C (th 7). Butter a pie pan with the rest of the butter. Roll out the dough with a rolling pin until you obtain a disk a little larger than the mold. Place the dough in the mold and press well on the sides so that it adheres well to the edges. Pour in the cheese preparation. Bake for 25 minutes at 200°C then 10 minutes at 180°C. If the quiche becomes too brown on top, cover it with a sheet of aluminum.
