Description

These mushroom burgers are a delicious vegetarian alternative to the classic burger. The juicy portobello mushrooms are marinated in a spicy marinade and then fried. Caramelized balsamic onions and fresh radicchio provide a perfect balance of sweetness and bitterness. I like to make these burgers when I want to prepare something hearty and healthy at the same time. They are ideal for a quick lunch or a relaxed dinner with friends. The preparation is straightforward and the result tastes simply fantastic! If you like, you can also add some vegan cheese.

Ingredients (13 ingredients)

  • 4 piece Portobello Mushrooms
  • 2 clove Garlic
  • 4 tbsp Soy sauce
  • 3 tbsp Maple syrup
  • 3 tbsp Balsamic vinegar
  • to taste Salt
  • to taste Pepper
  • 4 piece Onions
  • 4 tbsp Rapeseed oil
  • 0.25 piece Radicchio
  • 2 piece Carrots
  • 4 piece Burger buns (vegan if necessary)
  • 4 tbsp Mild Guacamole vegan

Preparation (8 steps)

Chop garlic

Thermomix® Setting

Add 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare marinade

Mix the chopped garlic with 4 tbsp soy sauce, 2 tbsp maple syrup and 2 tbsp balsamic vinegar in a bowl. Season with salt and pepper.

Marinate mushrooms

Clean 4 portobello mushrooms and remove the stems. Generously coat the mushrooms with the marinade and let them soak for at least 20 minutes.

Chop onions

Peel 4 onions, halve and place in the mixing bowl. Chop for 3 sec./speed 5. Scrape down with the spatula.

Caramelize onions

5 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add 2 tbsp rapeseed oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1. Add 1 tbsp maple syrup and 1 tbsp balsamic vinegar and simmer for another 5 min./100°C/gentle stir setting/reverse.

Grate carrots

Peel 2 carrots, roughly chop and place in the mixing bowl. Chop for 4 sec./speed 5.

Fry mushrooms

Heat 2 tbsp rapeseed oil in a large pan. Fry portobello mushrooms for 4-5 minutes on each side until well browned and cooked through.

Top burger

Toast burger buns on the cut surfaces in a pan without oil. Spread the bottom bun halves with 4 tbsp mild guacamole, place carrots and mushrooms on top and spread the caramelized onions and radicchio on top. Close with the top bun half and serve.
