Description

This recipe for rib-eye steak with swede fries is a real highlight for all meat lovers! The combination of juicy steak and the slightly sweet, crispy swede fries is simply unbeatable. I especially like to make the swede fries in autumn when the turnips are freshly harvested. The cucumber salad with dill provides a refreshing note. The onion hollandaise rounds off the dish perfectly. A great dish for a festive dinner or a special occasion. The preparation takes a little time, but the effort is definitely worth it!

Ingredients (23 ingredients)

  • 2 piece Salad cucumbers
  • to taste Salt
  • 1.5 kg Swede
  • 15 g Cornstarch
  • 2 tsp Smoked paprika powder
  • 1 piece Grated zest of organic lemon
  • to taste Pepper
  • 5 tbsp Olive oil
  • 1 piece Onion
  • 100 g Whipping cream
  • 1 Beutel Preparation for hollandaise sauce (for 125 g butter)
  • 50 g Cold butter
  • 150 g Sour cream
  • 2 tbsp White wine vinegar
  • 3 tbsp Lemon juice
  • 1 tbsp Sugar
  • 3 Stiele Parsley
  • 5 Fähnchen Dill
  • 2 tbsp Clarified butter
  • 4 piece Rib-eye steaks
  • to taste Steak pepper
  • to taste Coarse salt or Fleur de Sel for sprinkling
  • Oil for the baking sheet

Preparation (8 steps)

Prepare cucumbers

Wash salad cucumbers, slice thinly and sprinkle with salt. Mix cucumbers well and let them sit covered. No Thermomix setting required.

Prepare swede

Halve swede, cut into thick slices (1.5-2 cm) and peel. Cut swede slices into long sticks and place in a large bowl. Sieve starch and 1 1/2 tsp smoked paprika powder over it. Add lemon zest, 1 tsp salt and pepper and mix everything. Drizzle 4 tbsp oil over it and mix well. Grease a deep baking sheet with oil. Spread swede fries evenly in one layer on it. Bake in a preheated oven (electric oven: 200 °C/convection oven: 180 °C) for approx. 50 minutes until golden brown. In between, loosen and turn swede fries from the baking sheet 2 times. No Thermomix setting required.

Chop onion

Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec./level 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1. Season with salt and ½ tsp paprika powder.

Prepare Hollandaise

Thermomix® Setting
4 min/194°F/Speed 2 90

Add cream and 100 ml water to the mixing bowl. Stir in sauce powder and stir for 4 min./90°C/level 2. Add cold butter in pieces and stir in for 20 sec./level 3. Stir in fried onion. Keep sauce warm.

Prepare cucumber salad

Drain cucumbers and squeeze out if necessary. Mix sour cream, vinegar and lemon juice. Season with salt, pepper and sugar. Wash herbs. Chop parsley, pluck dill fronds and finely chop, except for some for garnish. Stir herbs into the sour cream, then mix in the cucumbers. Season salad with salt and pepper. No Thermomix setting required.

Fry steaks

Heat clarified butter in a large pan. Fry steaks in it over high heat for approx. 4 minutes on each side. Remove steaks. Season with steak pepper and salt. Let steaks rest covered for approx. 5 minutes. No Thermomix setting required.

Arrange

Sprinkle swede fries with coarse salt. Arrange with steaks and onion hollandaise. Garnish cucumber salad with dill and serve with it. No Thermomix setting required.
