Description

This creamy pepper sauce is a poem! I've been making it for years and it goes perfectly with meat, vegetables or even pasta. The green pepper in brine gives the sauce a pleasant spiciness, which is wonderfully softened by the cream. Preparation in the Thermomix® is super easy and quick, so you can enjoy this delicious sauce even during the week. An absolute must for all sauce lovers! The sauce is vegetarian and can be prepared well in advance.

Ingredients (10 ingredients)

  • 2 piece Shallots
  • 1 tbsp Butter
  • 2 tbsp Green pepper (in brine)
  • 100 ml White wine (dry)
  • 300 ml Beef broth
  • 300 g Whipping cream
  • 1 tsp Mustard (medium hot)
  • to taste Salt
  • to taste Pepper
  • 1 tsp Cornstarch

Preparation (6 steps)

Chop shallots

Thermomix® Setting

Peel 2 shallots, halve and place in the mixing bowl. Chop 3 sec./level 5.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp butter to the shallots in the mixing bowl and sauté 3 min./120°C/level 1.

Add pepper and sauté

Thermomix® Setting
2 min/248°F/Speed 1 120

Lightly press 2 tbsp green pepper (in brine) and add to the mixing bowl. Sauté for 2 min./120°C/level 1.

Deglaze with white wine and reduce

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 100 ml white wine (dry) to the mixing bowl and let it reduce for 3 min./100°C/level 1 without a measuring cup.

Add broth and cream

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 300 ml beef broth and 300 g whipping cream to the mixing bowl and simmer for 5 min./90°C/level 2.

Season and thicken

3 min/194°F/Speed 2 90

Add 1 tsp mustard (medium hot), salt and pepper to taste to the mixing bowl. Stir 1 tsp cornstarch with some water, add to the mixing bowl and simmer for 3 min./90°C/level 2 until the sauce reaches the desired consistency.
