Description

This pot roast sauce, prepared in the Thermomix®, is a hearty highlight for autumnal and festive occasions. With onions, celery, carrots and tomato paste as a base, an aromatic sauce is created that goes perfectly with meat dishes. Preparation in the Thermomix® takes a total of 45 minutes, with an active working time of around 20 minutes. The recipe makes 4 servings and is ideal as a sauce for a main course.

Ingredients (19 ingredients)

  • 1 Zwiebel Onion
  • 2 EL Oil
  • 100 g Celery
  • 100 g Carrots
  • 1 EL Tomato paste
  • 1 Stück Bay leaf
  • 5 Stück Peppercorns
  • 3 Stück Juniper berries
  • 2 Stück Cloves
  • 1 Zweig Rosemary
  • 1 Zweig Thyme
  • 250 ml Red wine
  • 2 EL Vinegar
  • 250 ml Meat broth
  • 1 TL Mustard
  • 1 EL Sauce thickener, light
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Pot roast

Preparation (9 steps)

Chop onions

Peel and quarter the onion. Place in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and chop vegetables

Clean and roughly chop the celery and carrots. Add to the mixing bowl together with the tomato paste and chop for 5 sec./level 5.

Add and sauté aromas

3 min/248°F/Speed 1 248°F

Add bay leaf, peppercorns, juniper berries, cloves, rosemary and thyme to the mixing bowl and sauté for another 3 min./120°C/level 1.

Deglaze with liquid and simmer

Thermomix® Setting
20 min/212°F/Speed 1 212°F

Add red wine and vinegar to the mixing bowl and simmer for 20 min./100°C/level 1.

Sear meat

Sear the meat in a separate pan.

Finish sauce

15 min/212°F/Speed 1 212°F

Add meat broth and mustard to the mixing bowl. Add the seared meat and simmer for another 15 min./100°C/level 1.

Thicken sauce

Thermomix® Setting

Add sauce thickener to the mixing bowl and stir in for 2 min./100°C/level 2.

Season and serve

Season the sauce with salt and pepper and serve.
