  • 2 Stück Onions
  • 1 Stück Carrot
  • 2 EL Sweet cream butter
  • 1 EL Tomato paste
  • 1 EL Balsamic vinegar
  • 1 EL Soy sauce
  • 80 ml Red wine
  • 1 Stück Bay leaf
  • nach Geschmack Pepper
  • 1 EL Brown raw cane sugar
  • 400 ml Vegetable broth

Prepare onions and carrot

Peel 2 onions and quarter them. Peel 1 carrot and cut into coarse pieces.

Chop onions and carrot

Place onions and carrot in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté the vegetables

Add 2 tbsp sweet cream butter and sauté for 3 min./120°C/speed 1.

Add more ingredients and simmer

Thermomix® Setting
20 min/212°F/Speed 1 Linkslauf 100 Reverse

Add 1 tbsp tomato paste, 1 tbsp balsamic vinegar, 1 tbsp soy sauce, 80 ml red wine, 1 bay leaf, pepper to taste, 1 tbsp brown raw cane sugar and 400 ml vegetable broth and simmer for 20 min./100°C/speed 1 Reverse.

Puree sauce

Thermomix® Setting
30 sec/Speed 8-10

Remove bay leaf. Puree the sauce for 30 sec./speed 8-10, slowly increasing the speed.

Refine the sauce

Thermomix® Setting
5 min/212°F/Speed 1 Linkslauf 100 Reverse

Bring the sauce to a boil for another 5 min./100°C/speed 1 Reverse. If necessary, add some vegetable broth to make the sauce more liquid or thicken with some sauce thickener.
