Description

This exotic Sauerbraten from the Thermomix® is a hearty main course with beef, onions, celery and leek. Preparation with the Thermomix® takes a total of 180 minutes, with an active working time of about 60 minutes. The recipe is designed for 6 servings and is ideal for festive occasions or a special family meal. The Sauerbraten is an interesting variation of the classic and brings variety to the table.

Ingredients (18 ingredients)

  • 1 kg Beef (from the leg)
  • 2 Stück Onions
  • 200 g Celery
  • 1 Stange Leek
  • 250 ml Vinegar
  • 250 ml Water
  • 1 EL Mustard
  • 1 TL Peppercorns
  • 2 Stück Bay leaf
  • 3 Stück Cloves
  • 4 Stück Allspice berries
  • 5 Stück Juniper berries
  • 1 TL Salt
  • 50 g Raisins
  • 50 g Almonds (flaked)
  • 50 g Gingerbread (unglazed)
  • 1 EL Oil
  • 1 EL Sauce thickener

Preparation (10 steps)

Prepare the vegetables

Peel the celery and cut into coarse pieces. Clean the leek and cut into rings. Peel the onions and halve them.

Chop the onions

Place the onions in the mixing bowl and chop for 3 sec/speed 5.

Sauté the onions

Add oil to the onions in the mixing bowl and sauté for 3 min/120°C/speed 1.

Add and sauté the vegetables

Add celery and leek to the onions in the mixing bowl and sauté for another 3 min/120°C/speed 1.

Prepare the marinade

Add vinegar, water, mustard, peppercorns, bay leaf, cloves, allspice berries, juniper berries and salt to the mixing bowl and mix for 5 sec/speed 3.

Sear the meat

Sear the meat on all sides in a separate pan.

Marinate the meat

Place the seared meat in a freezer bag and pour the marinade from the mixing bowl over it. Seal and marinate in the refrigerator for at least 2 days.

Simmer the Sauerbraten

After the marinating time, remove the meat from the bag and collect the marinade. Sear the meat again in the pan. Return the marinade and meat to the mixing bowl. Add raisins, almonds and gingerbread. Simmer for 90 min/100°C/Reverse speed speed 1.

Thicken the sauce

Remove the Sauerbraten from the mixing bowl and keep warm. Reduce the sauce in the mixing bowl for 5 min/Varoma/speed 2 without the measuring cup.

Refine the sauce

1 min/212°F/Speed 3 212°F

Stir in the sauce thickener and mix for 1 min/100°C/speed 3. Season to taste and add more seasoning if necessary.
