Description

These savory cheese-sausage-crescents are an absolute hit at any party! I have been making them for years and they are always a hit. The puff pastry is filled with grated cheese and juicy sausages, rolled up and baked until golden brown. They are served with a creamy dip made from cream cheese, mayonnaise, honey and curry - simply delicious! The preparation is very easy and the croissants are ready in no time. Perfect as a snack in between or as a delicious side dish for grilling.

Ingredients (12 ingredients)

  • 300 g Puff pastry (chilled section)
  • 100 g Cheddar (grated)
  • 6 piece Vienna sausages
  • 1 piece Egg yolk
  • 3 tbsp Milk
  • 3 tbsp black Sesame
  • 50 g Mayonnaise
  • 150 g Double cream cream cheese
  • 1 tsp liquid Honey
  • 1 tbsp Curry powder
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Prepare puff pastry

Unroll the puff pastry and cut it into 6 equal rectangles with a knife. Spread the rectangles on a work surface.

Prepare cheese

Sprinkle the grated Cheddar on the puff pastry rectangles, leaving a small border free all around.

Roll in sausages

Place one Vienna sausage on each puff pastry rectangle and roll up the dough. Cut the dough rolls into 3 pieces each.

Brush sausage rolls

Add egg yolk and milk to the mixing bowl and mix for 10 sec./speed 3.

Brush and garnish sausage rolls

Brush the sausage rolls with the egg yolk-milk mixture and sprinkle with black sesame seeds.

Prepare dip

Add mayonnaise, double cream cream cheese, honey and curry powder to the mixing bowl. Season with salt and pepper and mix for 20 sec./speed 3.

Season dip

Season the dip with salt and pepper and refrigerate until serving.

Baking in the oven

Place the sausage rolls with the seam side down on a baking sheet lined with baking paper and bake in a preheated oven at 180 °C top/bottom heat for 10-15 minutes until golden brown.

These savory cheese-sausage-crescents have been a staple in our family since I discovered them at a children's birthday party a few years ago. The hostess had prepared a huge platter of them and they were gone faster than you could say "puff pastry"! Since then, I have refined the recipe again and again and adapted it to our preferences. The puff pastry forms the basis for these little delicacies. It provides the crispy, airy texture that goes so well with the savory filling. The Cheddar, with its spicy, slightly nutty flavor, melts during baking and blends wonderfully with the juicy Vienna sausages. The sausages themselves bring the hearty flavor to the crescents. I prefer to use Vienna sausages because they have a fine texture and do not taste too dominant. The preparation with the Thermomix® is very simple. Stirring the egg yolk and milk is quick and even, so that the croissants get a beautiful, golden brown color. Be careful not to leave the puff pastry out of the refrigerator for too long, otherwise it will become too soft and more difficult to process. If the dough sticks, lightly dust the work surface with flour. When rolling up the sausages, it is important to press the dough firmly so that the croissants do not open during baking. For a vegetarian version, you can replace the Vienna sausages with vegetarian sausages or Halloumi cheese. Instead of Cheddar, you can also use other types of cheese such as Gouda, Emmentaler or Mozzarella. If you like it a little spicier, you can add a pinch of chili powder or finely chopped jalapeños to the cheese. Instead of black sesame seeds, poppy seeds, caraway seeds or roasted onions are also suitable as a topping. The dip made from cream cheese, mayonnaise, honey and curry powder is the icing on the cake of these savory croissants. It gives them a creamy, slightly sweet and spicy note that harmonizes perfectly with the salty cheese and sausages. If you don't like mayonnaise, you can replace it with yogurt or sour cream. For a vegan version, use vegan mayonnaise and cream cheese. Serve the cheese-sausage-crescents warm or cold as a snack in between, as a side dish for grilling or as finger food at parties. They go perfectly with a fresh salad or a glass of beer. You can easily store the baked croissants in the refrigerator for 1-2 days. Before serving, you can briefly warm them up in the oven or in the microwave. They can also be prepared well in advance: You can store the filled and rolled croissants in the refrigerator until baking. You can also prepare the dip in advance and refrigerate it until serving.
