Description

These savory crêpes with spinach filling are an absolute delight! I like to make them when I want to prepare something special for a relaxing weekend. The combination of the delicate crêpe, the spicy spinach, the savory ham, and the melted cheese is simply irresistible. The preparation is a bit more complex, but it's definitely worth it! The crêpes taste particularly delicious when served immediately after filling, when the cheese is still nicely melted and the spinach is warm. A great dish for brunch or a light dinner.

Ingredients (12 ingredients)

  • 1 piece Egg (size M)
  • 100 ml Milk
  • 50 g Flour
  • 1 pinch Salt
  • 250 g Baby spinach
  • 2 piece Shallots
  • 200 g Cooked ham
  • 200 g Emmental cheese
  • 0.5 bunch Parsley
  • 2 tsp Oil
  • 1 pinch Pepper
  • 1 pinch Nutmeg

Preparation (7 steps)

Prepare the crêpe batter

Thermomix® Setting
20 sec/Speed 4

Put 1 egg (size M), 100 ml milk, 50 g flour and 1 pinch of salt into the mixing bowl and mix for 20 sec/speed 4 until smooth. Then let the dough rest in the mixing bowl for 10 minutes.

Chop shallots

Thermomix® Setting
3 sec/Speed 5

Peel and halve 2 shallots and put them in the mixing bowl. Chop for 3 sec/speed 5. Scrape down with the spatula.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tsp oil to the shallots in the mixing bowl and sauté for 3 min/120°C/speed 1.

Add and steam spinach

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add 250 g baby spinach (washed and drained) to the shallots in the mixing bowl and steam for 3 min/100°C/reverse direction speed 1. Season with salt, pepper and nutmeg.

Prepare spinach mixture

Remove the spinach from the mixing bowl and put it in a bowl. Cut 200 g cooked ham and 200 g Emmental cheese into cubes and fold into the spinach. Wash ½ bunch of parsley, chop finely and also fold into the spinach-ham-cheese mixture.

Bake crêpes

Grease a coated pan with a little oil and heat. Bake 4 thin crêpes one after the other from the dough. Keep the finished crêpes warm.

Fill and serve crêpes

Fill the crêpes with the spinach-ham mixture, fold or roll up, arrange and sprinkle with some chopped parsley.
