This savory ground beef zucchini pan is a quick and easy low-carb dish that is ready in just 30 minutes. With ground beef, fresh vegetables such as zucchini and peppers, and spicy feta, it is ideal for a high-protein lunch or dinner. The recipe is designed for 4 servings and is perfect for quick cooking with the Thermomix®.

Ingredients (13 ingredients)

  • 1 piece Onion
  • 2 Zehen Garlic
  • 400 g Zucchini
  • 2 piece Red bell peppers
  • 1 tbsp Olive oil
  • 500 g Ground beef
  • 400 g Chopped tomatoes
  • 2 tbsp Chopped parsley
  • 150 g Feta
  • to taste Salt
  • to taste Pepper
  • to taste Sweet paprika powder
  • to taste Nutmeg

Chop onion and garlic

Add 1 peeled and quartered onion and 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté onion and garlic

Add the chopped onion-garlic mixture along with 1 tablespoon of olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare vegetables

Halve 400 g zucchini lengthwise and cut into thin slices. Cut 2 red bell peppers into strips. Set both aside.

Fry ground beef

Heat 1 tablespoon of olive oil in a large pan and fry 500 g of ground beef in it, seasoning with salt and pepper. Remove the ground beef from the pan and set aside.

Sauté vegetables

Add zucchini and peppers to the pan and sauté for about 3 minutes.

Add tomatoes and parsley

Add 400 g of chopped tomatoes (canned), 2 tablespoons of chopped parsley and the fried ground beef to the pan and mix in.

Simmer and season

Let everything simmer for 5 minutes and season with salt, pepper, sweet paprika powder and nutmeg.

Serve

Serve the ground beef-vegetable pan sprinkled with 150 g of feta.

This ground beef zucchini pan is a dish that originated in our home when we were trying to create a quick, healthy and filling meal that also empties the fridge. Inspired by Mediterranean flavors and the desire for a low-carb option, this pan has become a real family favorite. The list of ingredients is deliberately kept simple, but each component plays an important role. The ground beef provides the basis for a hearty dish and provides a good portion of protein. The onion and garlic, finely chopped and sautéed in the Thermomix®, form the aromatic base. The zucchini, with its mild sweetness and slightly crunchy bite, harmonizes wonderfully with the juicy peppers, which bring a fruity note and color to the dish. The chopped tomatoes, preferably from a can for consistent quality and acidity, combine all the ingredients into a creamy sauce. The fresh parsley brings a light, herbaceous freshness, while the feta, crumbled over the finished pan, adds a salty, creamy component that perfectly rounds off the dish. The spices – salt, pepper, sweet paprika powder and nutmeg – are the invisible heroes that enhance the flavors and ensure a balanced taste. The Thermomix® is a practical helper here to chop onion and garlic quickly and evenly. Make sure to quarter the onion before chopping for optimal results. Sautéing in the Thermomix® saves time and ensures even heat distribution. The actual browning of the ground beef and the sautéing of the vegetables takes place in a separate pan, as the Thermomix® would be limited here in order to achieve a nice browning. For a vegetarian version, you can simply replace the ground beef with lentils or another plant-based ground beef alternative. If you like it vegan, leave out the feta or use a vegan feta alternative. You can let your creativity run wild with the spices. A little chili for spiciness, oregano for a Mediterranean note or cumin for an oriental touch – anything is allowed! Serve the ground beef zucchini pan pure as a low-carb meal or with a dollop of yogurt or sour cream. A fresh salad or a piece of crusty bread goes well with it. Rice or quinoa are also a good option if you want to add carbohydrates. Leftovers of the ground beef zucchini pan can be easily stored in the refrigerator and reheated the next day. They taste even better when the flavors have had time to develop. You can also prepare the pan well by cutting the vegetables the day before and browning the ground beef. This saves you time the next day and you have a delicious meal on the table in no time at all.
