Description

This savory pea and feta tart is a delightful dish, perfect for a spring brunch or a light lunch. I've been making this recipe for years, and it's always a hit! The combination of creamy crème fraîche, salty feta, and sweet peas creates a wonderful flavor profile. The fresh mint and parsley add a bright, herbaceous note that complements the other ingredients perfectly. It's best served warm or at room temperature with a simple green salad. The tart is also great for picnics or potlucks. It's a vegetarian dish that's sure to please everyone!

Ingredients (11 ingredients)

  • 175 g frozen peas
  • 200 g crème fraîche
  • 200 g feta
  • 300 ml double cream
  • 3 piece eggs
  • 8 piece mint leaves
  • 1 handful parsley
  • 1 piece green salad
  • 250 g plain flour
  • 125 g butter
  • 1 piece egg yolk

Preparation (6 steps)

Prepare the pastry

Thermomix® Setting
20 sec/Speed 5

Add 250g plain flour, 125g butter (cut into cubes), and a pinch of salt to the mixing bowl. Process for 20 Sec./Stufe 5 until the mixture resembles fine breadcrumbs. Add 1 egg yolk and process for 10 Sec./Stufe 4 until a soft dough forms. If needed, add ½ tsp of water slowly and gradually through the lid opening while processing.

Chill the pastry

Tip the dough out onto a lightly floured surface and form into a flat disc. Wrap in plastic wrap and chill in the refrigerator for 15-20 minutes.

Roll out and pre-bake the pastry

Preheat the oven to 180°C/160°C fan/gas 4. Roll out the pastry on a lightly floured surface until ½cm thick and wide enough to line a 23cm tart tin (loose-bottomed is easiest). Prick the base all over with a fork and chill for 15 minutes. Line the pastry case with baking parchment and baking beans, then bake for 10 minutes. Remove the parchment and beans, and bake for a further 5-10 minutes until a light biscuit colour.

Prepare the filling

Add 58g frozen peas, 200g crème fraîche, 100g feta, 300ml double cream, and 3 eggs to the mixing bowl. Process for 20 Sek./Stufe 5 until smooth.

Combine the filling ingredients

Pour the mixture into a bowl and mix in the remaining 117g frozen peas, 100g feta, 8-10 mint leaves (chopped), and a handful of parsley (chopped). Season well with salt and pepper.

Bake the tart

Pour the filling into the prepared pastry case. Bake in the preheated oven for 25-35 minutes until the filling is set and golden. Leave to cool a little in the tin before removing and serving.
