Description

These savory roast beef bites on crispy potato fritter corners are a real eye-catcher at any party! I especially like to make them when I have guests because they can be prepared well in advance. The roast beef is filled with pickled pumpkin and spring onions and turned into delicate rolls. The sour cream dip with lingonberries provides a fruity and savory note. The fritter corners made from potato dough are a great alternative to classic potato pancakes and go perfectly with the rolls. An absolute must for all meat lovers!

Ingredients (12 ingredients)

  • 6 Stiele Thyme
  • 750 g Potato dumpling dough “Half and half”
  • 2 piece Eggs (Size M)
  • 150 g Pickled pumpkin
  • 1 bunch Spring onions
  • 6 Scheiben Raw ham
  • 12 Scheiben Roast beef
  • 200 g Sour cream
  • 1 tbsp Wild lingonberries
  • Salt
  • Pepper
  • 2 tbsp Oil

Preparation (9 steps)

Chop thyme

Thermomix® Setting
3 sec/Speed 8

Put 6 sprigs of thyme into the mixing bowl and chop for 3 sec./speed 8. Then transfer.

Prepare potato dough

Thermomix® Setting
2 min/Kneading speed

Put 750 g potato dumpling dough “Half and half”, 1 egg and the chopped thyme into the mixing bowl and mix for 2 min./kneading stage to form a dough. Remove the dough from the mixing bowl.

Shape and bake potato base

Place the dough on a baking sheet lined with baking paper and use moistened hands to press into a flat, rectangular base (approx. 25 x 30 cm). Whisk 1 egg and brush the potato slab with it. Bake in a preheated oven (electric oven: 200 °C/convection oven: 180 °C) for approx. 20 minutes.

Prepare pumpkin

Drain 150 g of pickled pumpkin and cut into small pieces.

Prepare spring onions

Wash 1 bunch of spring onions and cut into approx. 8 cm long pieces.

Prepare sour cream dip

Thermomix® Setting
10 sec/Speed 3

Put 200 g sour cream and 1 tbsp wild lingonberries into the mixing bowl and mix for 10 sec./speed 3. Season with salt and pepper.

Fill and roll rolls

Place one slice of roast beef and ham slightly overlapping on top of each other. Spread pumpkin and spring onion pieces on top and roll up.

Fry rolls

Heat 2 tbsp oil in a pan. Fry the rolls in batches, seam side down, on all sides for approx. 2 minutes.

Cut and arrange fritter corners

Remove the baked potato slab and cut into pieces. Arrange with the fried rolls and the lingonberry sour cream.
