Description

These cheese noodles are real soul food! I love making them when it's cold outside. The spicy mountain cheese from the Allgäu region makes them particularly aromatic. The preparation is a bit more complex, but it's totally worth it! Perfect as a main course for the whole family or for a cozy evening with friends. If you like, you can add some grated nutmeg. And the best part: They still taste great warmed up!

Ingredients (8 ingredients)

  • 500 g Wheat flour Type 405
  • 1 tsp Salt
  • 6 piece Eggs
  • 150 ml Sparkling water
  • 300 g Allgäu mountain cheese
  • 3 piece Shallots
  • 2 tbsp Butter
  • 5 Stiel(e) Parsley

Preparation (9 steps)

Prepare flour mixture

Thermomix® Setting
10 sec/Speed 4

Add 500 g wheat flour type 405 and 1 teaspoon of salt to the mixing bowl and mix for 10 seconds/speed 4.

Prepare Spätzle dough

Thermomix® Setting
30 sec/Speed 5

Add 6 eggs and 150 ml sparkling water to the flour mixture in the mixing bowl and mix for 30 seconds/speed 5 to form a smooth dough. Then transfer the dough to a bowl and let it rest for about 1 hour.

Grate mountain cheese

Thermomix® Setting
15 sec/Speed 6

Put 300 g Allgäu mountain cheese in pieces into the mixing bowl and chop for 15 seconds/speed 6. Transfer and set aside.

Prepare shallots

Thermomix® Setting
3 sec/Speed 5

Peel and halve 3 shallots. Place in the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to scrape down from the edge.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of butter to the shallots in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Cook Spätzle

Bring plenty of salted water to a boil in a saucepan. Press the dough into the water in portions using a Spätzle press (or scrape it in from the board with a dough scraper if necessary) and cook until they rise to the surface (takes 2-3 minutes). Remove the Spätzle with a slotted spoon and drain.

Mix and bake cheese noodles

Mix Spätzle, cheese and onions in a baking dish and bake in a preheated oven at 175 °C for about 10 minutes. In the meantime, wash, shake dry and chop the parsley.

Chop parsley

Put 5 sprigs of parsley in the mixing bowl and chop for 3 seconds/speed 8.

Serve

Sprinkle the cheese noodles with the chopped parsley and serve.
