Description

I love this recipe for chicken scallops piccata with lemon! It's a classic Italian dish, revisited for easy and quick preparation with the Thermomix®. The chicken scallops are tender and tasty, with a tangy lemon sauce flavored with sage and parsley. Perfect for a light lunch or weeknight dinner. The touch of capers adds a small salty note that goes wonderfully with the lemon. A real treat for the taste buds, ready in under 30 minutes! Feel free to accompany this dish with fresh pasta or a green salad.

Ingredients (12 ingredients)

  • 4 piece Chicken breast(s)
  • 4 c. à soupe Flour
  • 2 c. à soupe Caper(s)
  • 2 clove Garlic
  • 15 cl White wine
  • 1 noisette Butter
  • 1 piece Lemon(s)
  • 1 cube Poultry broth
  • Sage
  • Parsley
  • Salt
  • Pepper

Preparation (8 steps)

Preparation of the chicken scallops

Cut the chicken breasts in half and flatten them lightly. Set aside in the refrigerator.

Preparation of the flour mixture

In a bowl, mix 4 tbsp of flour, chopped sage (quantity according to your taste), salt and pepper.

Coating the chicken

Dip the chicken pieces in the flour mixture, making sure to coat them well.

Cooking the chicken in the pan

Melt 1 knob of butter in a frying pan over medium heat. Cook the flour-coated chicken scallops until golden brown and cooked through. Set aside.

Preparation of the lemon

Cut the lemon in half. Squeeze the juice from the first half of the lemon and cut the other half into slices.

Preparation of the lemon sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

In the Thermomix bowl, add the lemon juice, lemon slices, 2 chopped garlic cloves, 15 cl of white wine and 1 cube of poultry broth. Set 5 Min./100°C/Stufe 2.

Adding the capers and parsley

Thermomix® Setting
10 sec/Speed 1/Linkslauf Reverse

Add 2 tbsp of capers and chopped parsley to the Thermomix bowl. Mix 10 Sek./Stufe 1/Linkslauf.

Coating and serving

Coat the chicken scallops with the lemon sauce and serve immediately.
