Description

These Viennese slices, prepared in the Thermomix®, are a delicious finger food dessert, ideal for festive occasions or the Christmas season. The main ingredients are flour, butter, egg yolk, sugar and apricot jam. Preparation takes a total of 120 minutes, with the active working time being approximately 60 minutes. The recipe yields approximately 30 servings and is perfect for those who enjoy baking and love classic cookies.

Ingredients (11 ingredients)

  • 300 g Flour
  • 175 g Butter or margarine
  • 2 EL Rum
  • 2 Stück Egg yolk
  • 100 g Scraped mark of vanilla bean
  • 0.5 Stück Flour for working
  • Apricot jam
  • 100 g Lemon juice or apricot spirit
  • 1 EL White couverture
  • 75 g Icing sugar for dusting
  • Puderzucker zum Bestäuben

Prepare dough

Thermomix® Setting

Add flour, butter or margarine, rum, egg yolk, sugar and the vanilla bean pulp to the mixing bowl. Use the Patix dough knife instead of the standard knife for 2 min./kneading stage to process into a dough.

Chill dough

Wrap the dough in cling film and refrigerate for at least 30 minutes.

Roll out and cut out dough

Roll out the dough on a lightly floured work surface to approx. 2-3 mm thick. Cut out squares of approx. 3 cm side length and place on a baking tray lined with baking paper.

Baking

Preheat the oven to 175°C (convection: 160°C, gas mark 2). Bake the cookies for approx. 10 minutes until they are light golden brown.

Prepare apricot jam

Thermomix® Setting

Place apricot jam with the liquid in the mixing bowl and heat for 3 min./100°C/level 2. Then pass through a sieve.

Assemble cookies

Brush half of the cookies with the apricot jam and place one unbrushed cookie on top.

Melt couverture

Thermomix® Setting
3 min/122°F/Speed 1 122°F

Chop the couverture and place in the mixing bowl. Melt for 3 min./50°C/level 1.

Decorate cookies

Fill the melted couverture into a small piping bag with a fine opening and squirt crossed diagonals onto the cookies. Dust with icing sugar.
