Description

A hearty potato dish served with sauerkraut.

Ingredients (14 ingredients)

  • 1 kg Firm boiling potatoes, raw, unpeeled
  • 500 g Potatoes, cooked
  • 100 g Ham, diced
  • Herb salt
  • Caraway
  • Pepper
  • Garlic
  • Marjoram
  • 2 EL Olive oil
  • 20 g Butter
  • 1 Bund Chives for sprinkling
  • 1 kg Sauerkraut
  • Juniper
  • Caraway

Preparation (7 steps)

Prepare potatoes

Place 1 kg firm boiling potatoes raw, unpeeled, with the Wundermix WunderSlicer V2 on the mixing bowl lid and grate into the mixing bowl with the fine slicing disc. Remove the shredded material and set aside.

Grate cooked potatoes

Place 500 g cooked potatoes with the Wundermix WunderSlicer V2 on the mixing bowl lid and grate into the mixing bowl with the fine slicing disc. Remove the shredded material and set aside.

Chop ham

Cut 100 g ham into cubes and set aside.

Prepare potato mixture

Put the grated raw and cooked potatoes, the diced ham, herb salt, caraway, pepper, garlic and marjoram in the mixing bowl and mix with the Meistermix Patix dough knife for 2 min./level 3.

Shape and bake potato stack

Line a baking sheet with baking foil and press the potato mixture onto it, knife back thick. Drizzle with 2 tbsp olive oil (20 g) and top with 20 g butter flakes. Immediately slide into the oven preheated to 160 °C and bake until crispy.

Prepare Sauerkraut

Put 1 kg sauerkraut, juniper and caraway in a saucepan, heat and cook until soft for 5-30 min. depending on taste.

Arrange

Sprinkle the potato stack with plenty of fresh chives and serve together with the sauerkraut.
