Description

These chocolate brownies are an absolute dream for every chocolate lover! With three different types of chocolate – bittersweet, milk chocolate and white – they offer an intense taste experience. I especially like to bake them when visitors come or for birthdays, because they are easy to prepare and are always well received. The preparation takes a little time, but the result is worth it. The brownies are moist, chocolatey and simply irresistible. A perfect dessert or a sweet treat for in between!

Ingredients (11 ingredients)

  • 250 g Butter for the mold (if necessary)
  • 120 g Butter
  • 100 g Whole milk chocolate
  • 100 g White chocolate
  • 2 piece Eggs (size M)
  • 120 g Sugar
  • 130 g Wheat flour (type 405)
  • 3 tbsp Baking cocoa
  • 1 pinch Salt
  • 175 ml Cream
  • 125 g Bittersweet chocolate

Preparation (11 steps)

Prepare oven

Preheat the oven to 190 °C top and bottom heat. Line a baking tray with baking paper and place a baking frame of approx. 20 x 20 cm on top. Alternatively, grease a square cake tin of this size with butter.

Melt chocolate and butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Place 120 g butter and 125 g bittersweet chocolate in the mixing bowl and melt for 3 min./50°C/speed 2.

Cool the chocolate mixture

Pour the melted chocolate butter into a bowl and let it cool briefly. In the meantime, chop the whole milk and white chocolate and set aside.

Beat eggs and sugar

3 min/Speed 4

Place 2 eggs and 120 g sugar in the mixing bowl and beat for 3 min./speed 4 until the mixture is thick and foamy.

Stir in chocolate butter

Thermomix® Setting
20 sec/Speed 3

Add the cooled chocolate butter to the egg-sugar mixture in the mixing bowl and stir in for 20 sec./speed 3.

Mix and stir in dry ingredients

Mix 130 g wheat flour, 3 tbsp baking cocoa and 1 pinch of salt in a separate bowl. Add the flour mixture alternately with 100 ml cream to the mixing bowl and stir in for 30 sec./speed 3.

Fold in chocolate

10 sec/Linkslauf Speed 2 Reverse

Add about two thirds of the chopped whole milk and white chocolate to the mixing bowl and fold in for 10 sec./reverse rotation speed 2.

Bake batter

Pour the batter into the prepared mold or baking frame and bake in the preheated oven for 25–30 minutes. In this case, the stick should still come out slightly moist when tested with a stick.

Let the cake cool

Remove the cake from the oven and let it cool in the mold.

Prepare glaze

2 min/122°F/Speed 2 50

Place the remaining bittersweet chocolate and the remaining cream (75 ml) in the mixing bowl and melt for 2 min./50°C/speed 2.

Apply and decorate glaze

Sprinkle the cooled cake with the glaze and sprinkle with the remaining chopped chocolate. Let dry, then cut into approx. 16 squares.
