Description

These chocolate cupcakes are a delightful treat, especially for peanut butter lovers! The moist chocolate base is perfectly complemented by a creamy, toasted peanut butter meringue frosting. Ingredients (15 ingredients)

  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup milk
  • 0.25 cup vegetable oil
  • 1 piece egg
  • 0.5 tsp vanilla extract
  • 0.5 cup boiling water
  • 14 piece miniature peanut butter cup candies
  • 4 piece egg whites
  • 1 cup white sugar
  • 1 tbsp peanut butter

Prepare the oven and muffin tin

Preheat oven to 325 degrees F (165 degrees C). Line 14 muffin cups with paper muffin liners. This step is done outside of the Thermomix.

Combine dry ingredients

Add 1 cup all-purpose flour, 1 cup white sugar, ½ cup unsweetened cocoa powder, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt to the Thermomix bowl. Mix for 10 Sec./Stufe 4 to combine.

Add wet ingredients and mix

Add ½ cup milk, ¼ cup vegetable oil, 1 egg, and ½ teaspoon vanilla extract to the Thermomix bowl. Mix for 20 Sek./Stufe 3.

Incorporate boiling water

With the Thermomix running at Stufe 2, slowly pour ½ cup boiling water into the bowl. Then mix for 1 Min./Stufe 3.

Fill muffin cups and add candies

Fill each muffin cup halfway and place a miniature peanut butter cup in the center of each. This step is done outside of the Thermomix.

Bake the cupcakes

Bake in preheated oven until golden and tops spring back when lightly pressed, about 20 minutes. Remove from oven and cool in pan for 5 to 10 minutes. Cool completely on a cooling rack before frosting. This step is done outside of the Thermomix.

Prepare for meringue frosting

Set oven rack about 6 inches from the heat source and preheat the oven's broiler. This step is done outside of the Thermomix.

Dissolve sugar with egg whites

Add 4 egg whites and 1 cup white sugar to the Thermomix bowl. Mix for 5 Sek./Stufe 3. Pour egg mixture into a small saucepan and heat over medium heat until sugar is dissolved. Return egg mixture to bowl. This step is done outside of the Thermomix.

Whip meringue

Insert the butterfly whisk. Whip egg mixture on high speed for 3 Min./Stufe 3.5 until stiff peaks form.

Melt peanut butter

Place peanut butter in a microwave-safe bowl. Heat on high at 15-second intervals, stirring in between, until peanut butter is thin and creamy. This step is done outside of the Thermomix.

Fold in peanut butter

Gently fold melted peanut butter into egg whites. Transfer peanut butter frosting to a piping bag. This step is done outside of the Thermomix.

Frost and toast cupcakes

Pipe frosting onto cooled cupcakes. Toast cupcakes under preheated broiler until lightly browned, about 1 minute. This step is done outside of the Thermomix.
