Description

  • 3 EL Flour
  • 2 Stück Eggs
  • 100 g Breadcrumbs
  • Clarified Butter
  • 400 g Mushrooms
  • 1 Stück Onion
  • 50 g Butter
  • 2 EL Tomato Paste
  • 25 g Flour
  • 300 ml Beef Stock
  • 200 g Cream
  • Salt
  • Pepper

Preparation (11 steps)

Chop Onion

Peel, quarter the onion and place in the mixing bowl. Then chop for 3 sec./speed 5.

Prepare Mushrooms

Clean the mushrooms and cut into slices. Set aside.

Sauté Onion

Put the butter in the mixing bowl and sauté together with the chopped onion for 3 min./120°C/speed 1.

Fry Mushrooms

Add the mushrooms to the mixing bowl and sauté for 5 min./120°C/reverse rotation speed 1. Use a spatula to push everything down.

Roast Tomato Paste

Add the tomato paste to the mushrooms and roast for 1 min./120°C/reverse rotation speed 1. Use a spatula to push everything down.

Prepare Sauce

Thermomix® Setting

Add the flour to the mixing bowl and mix for 20 sec./speed 3. Then add the beef stock and cream. Season with salt and pepper and simmer for 10 min./90°C/speed 2.

Season Sauce

Season the sauce with salt and pepper and add more seasoning if necessary. Keep warm.

Prepare Cutlet

Flatten the pork cutlets and season with salt and pepper. Place flour, beaten eggs and breadcrumbs on separate plates.

Bread Cutlet

First roll the cutlets in the flour, then dip them in the eggs and then turn them in the breadcrumbs so that they are completely covered.

Fry Cutlet

Heat plenty of clarified butter in a pan and fry the breaded cutlets for 2-3 minutes per side until golden brown.

Serve

Serve the breaded cutlets with the mushroom cream sauce. Side dishes such as Spätzle, potatoes or rice go well with this.
