Description

This seafood rice in paella style is a Mediterranean main course that is prepared with the Thermomix®. The recipe combines risotto rice with a variety of seafood and vegetables, refined with saffron and paprika powder. The preparation time is about 45 minutes and the dish is designed for 2 servings. Ideal for a festive dinner or a summer lunch.

Ingredients (17 ingredients)

  • 125 g Natural Risotto rice (round grain)
  • 300 g Frozen Frutti di Mare (seafood mix)
  • 50 g Frozen peas
  • 250 g Fennel bulb
  • 1 Stück Red bell pepper
  • 100 g Parsnip
  • 1 Stück Red onion
  • 1 Stück Clove of garlic
  • 3 EL Olive oil
  • 0.05 Pck Ground saffron
  • 1.5 TL Hot paprika powder
  • 375 ml Vegetable broth
  • Salt
  • Pepper from the mill
  • 200 g Beef tomato
  • 4 Stiele Parsley
  • 0.5 Stück Organic lemon (in wedges)

Preparation (8 steps)

Prepare rice

The day before, put 125 g of natural risotto rice (round grain) in the mixing bowl and add 500 ml of cold water. Leave to soak overnight. The next day, pour off the rice and let it drain.

Prepare vegetables

Clean, wash and quarter 1 small fennel bulb (approx. 250 g) and cut across the grain into strips approx. 1 cm wide. Halve 1 red bell pepper lengthwise, core, wash and cut into approx. 1 1/2 cm cubes. Clean, peel and slice 1 parsnip (approx. 100 g). Peel, halve and finely slice 1 red onion. Peel and finely dice 1 clove of garlic.

Sauté vegetables

Put 2 tbsp olive oil in the mixing bowl. Add onion, garlic, fennel, pepper and parsnip and sauté for 3 min./120°C/speed 1. Remove the vegetables from the mixing bowl and set aside.

Sauté rice

Put the rice in the mixing bowl, sprinkle 1/2 pack of ground saffron (0.05 g) and 1½ tsp of hot paprika powder over it and sauté briefly. Add 375 ml vegetable broth, season with salt and pepper.

Cook rice

Close the mixing bowl and cook the rice for 20 min./100°C/speed 1. Stir occasionally with the spatula.

Fry seafood

Thaw 300 g frozen Frutti di Mare (seafood mix) and 50 g frozen peas and wash in a sieve, pat dry. Fry in a separate pan with 1 tbsp olive oil over medium heat for about 2 minutes. Remove.

Add tomato and mix

Wash 1 beef tomato (approx. 200 g), quarter and dice, removing the stalk. Stir tomato cubes, seafood, vegetable mix and peas into the rice and simmer everything uncovered for about 5 minutes. If necessary, pour in a little more broth and season the rice again.

Serve

Wash and shake dry 4 sprigs of parsley, pluck the leaves, chop finely and sprinkle over the seafood rice. Serve with 1/2 organic lemon (in wedges).
