Description

These Sesame Snails, prepared in the Thermomix®, are a delicious yeast pastry for breakfast or brunch. The main ingredients are wheat flour, fresh yeast, milk and butter. The recipe is vegetarian and belongs to the category of bread and rolls. Preparation takes a total of 240 minutes, of which 60 minutes are active working time, and yields 8 servings. Ideal for a relaxed family breakfast or as finger food for guests.

Ingredients (9 ingredients)

  • 350 g Wheat flour T550 or yellow wheat flour
  • 150 g Wheat flour T1050
  • 150 g Water
  • 150 g Milk
  • 6 g Fresh yeast
  • 1 TL Syrup
  • 11 g Salt
  • 12 g Butter
  • Sesame

Preparation (7 steps)

Prepare dough

Thermomix® Setting

Put wheat flour T550 or yellow wheat flour, wheat flour T1050, water, milk, fresh yeast, syrup, salt and butter in the mixing bowl and knead to a smooth dough.

Let the dough rise

Put the dough in a bowl and let it rise covered for about 30 minutes. Then stretch and fold the dough. Repeat this process 1-2 times. Then let the dough rise well.

Portion and shape dough

Divide the dough into 8-9 equal parts (approx. 100g each). Round off the dough pieces.

Shape snakes and roll up

Roll out the blanks long (approx. 30 cm long) and twist into snails.

Prepare snails

Spray the top of the snails with water and then dip in sesame.

Let the snails rise

Place the finished blanks on a baking sheet and cover with a tea towel. Let the snails rise until fully proofed.

Baking

Preheat the oven to 250°C. Slide the blanks into the oven and steam immediately. Turn down the temperature to 230°C and bake for approx. 10 minutes. Release the steam and possibly bake for a few more minutes at 200°C.
