Description

This tortilla layered dish with poultry is a savory and filling dish, perfect for parties or a cozy dinner. The combination of tender poultry, spicy beans and corn, fresh peppers, and a creamy cheese sauce makes this dish an absolute highlight. I like to make this variant when I have guests, as it can be prepared well in advance and baked golden brown in the oven. The tortillas provide a great texture and hold everything together wonderfully. If you like it a little spicier, you can add more chili. An absolute favorite recipe!

Ingredients (15 ingredients)

  • 600 g Poultry fillet
  • 1 piece Onion
  • 1 piece Garlic cloves
  • 1 piece Red bell pepper
  • 1 can Kidney beans
  • 1 can Sweetcorn
  • 1 piece Red chili pepper
  • 2 tbsp Olive oil
  • Salt
  • Pepper
  • 3 tsp Tomato paste
  • 1 can Tomatoes
  • 150 g Hard cheese
  • 250 g Crème fraîche
  • 6 piece Wheat tortillas

Preparation (9 steps)

Chop onion and garlic

Thermomix® Setting

Put 1 onion and 1-2 garlic cloves in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Chop pepper and chili

Thermomix® Setting
3 sec/Speed 4

Put 1 red bell pepper and 1 red chili pepper (deseeded, if desired) in the mixing bowl and chop for 3 sec./level 4. Push down with the spatula.

Prepare vegetables

Remove the chopped onions, garlic, peppers and chili from the mixing bowl and set aside. Rinse 1 can of kidney beans and drain. Drain 1 can of sweetcorn. Wash 600 g of poultry fillet, pat dry and dice very finely.

Fry meat

Heat 2 tbsp oil in a pan, fry the diced poultry fillet in it while turning. Briefly sauté the chopped onions, garlic, chili and peppers. Season with salt and pepper.

Prepare tomato sauce

Put the fried meat with the vegetables in the mixing bowl. Stir in 3 tsp tomato paste and sauté briefly. Add 1 can of tomatoes with juice, the drained corn and kidney beans. Season with salt and pepper and simmer for 5 min./100°C/level 1.

Grate cheese

Thermomix® Setting

Put 150 g hard cheese (e.g. Comté) in pieces in the mixing bowl and grate for 10 sec./level 8. Transfer.

Prepare cheese cream

Thermomix® Setting
10 sec/Speed 3

Put approx. 2/3 of the grated cheese with 250 g crème fraîche in the mixing bowl and mix for 10 sec./level 3.

Layer lasagna

Line a greased ovenproof dish (approx. 24 x 31 cm; 5 cm high) with 2 wheat tortillas (à 40 g; tortilla wraps), slightly overlapping. Spread half of the meat-vegetable sauce on top and cover with 2 more tortillas. Spread the remaining sauce on top and cover with the last 2 tortillas. Spread the cheese cream on top and sprinkle with the remaining grated cheese.

Bake lasagna

Bake the lasagna in a preheated oven (electric oven: 200 °C/convection oven: 175 °C/gas: see manufacturer) for approx. 30 minutes until golden brown.
