Description

This Kritharaki casserole is a real feast for all lovers of Mediterranean cuisine! Juicy pork strips, tender Kritharaki pasta and crunchy vegetables combine to create a hearty dish that simply makes you happy. The feta provides a pleasant saltiness, while lemon and oregano give the casserole a fresh touch. I like to make this casserole when I have friends visiting, because it can be prepared very well and tastes delicious even when warmed up. A great dish for cozy evenings!

Ingredients (22 ingredients)

  • 600 g Pork escalope
  • 1 tbsp Gyros spice
  • 6 tbsp Olive oil
  • 500 g Kritharaki pasta
  • Salt
  • 2 piece Red onions
  • 2 clove Garlic cloves
  • 2 can Cherry tomatoes
  • 425 ml to taste
  • 200 ml Vegetable stock
  • 2 tsp Dried oregano
  • Pepper
  • Cinnamon
  • 5 tbsp Ouzo
  • 400 g Green beans
  • 1 can White beans
  • 425 ml to taste
  • 200 g Feta
  • 1 piece Organic lemon
  • 1 tsp Sweet paprika
  • 50 g Roasted salted almonds
  • 3 Stiele Oregano

Preparation (10 steps)

Prepare onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Peel 2 red onions, halve and place in the mixing bowl. Chop for 3 seconds/speed 5. Add 2 cloves of garlic and chop for another 3 seconds/speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Thermomix® Setting

Add 2 tablespoons of olive oil to the onions and garlic in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 2 cans of cherry tomatoes (à 425 ml) with juice, 200 ml vegetable stock, 2 tsp dried oregano, salt, pepper and a pinch of cinnamon to the mixing bowl. Simmer for 10 min./100°C/speed 1.

Season the sauce

Add approx. 5 tablespoons of ouzo to the tomato sauce in the mixing bowl and stir for 5 seconds/speed 2. Season with salt and pepper.

Prepare green beans

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Wash 400 g green beans, clean, halve depending on size and place in the steamer basket. Fill 500 ml of water into the mixing bowl, insert the steamer basket and steam for 15 min./Varoma/speed 1.

Cook pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

After the steaming time, remove the steamer basket and set the green beans aside. Empty the water from the mixing bowl. Add 500 g Kritharaki pasta, salt and 1 litre of water to the mixing bowl and cook according to the package instructions (approx. 10 min.)/100°C/speed 1 without a measuring cup until just al dente.

Layer the casserole

Drain the Kritharaki pasta and green beans. Layer the pasta, green beans, 1 can of white beans (425 ml) and tomato sauce in a baking dish (20 x 30 cm). Cut 4 (approx. 600 g) pork escalopes into approx. 1 cm wide strips, knead with 1 tbsp gyros spice and 3 tbsp olive oil and fry in a pan without fat for approx. 10 minutes, turning several times. Add the meat to the baking dish as well.

Complete the casserole

Coarsely crumble 200 g feta and spread on the casserole. Wash 1 organic lemon, finely grate the peel and sprinkle on the casserole. Sprinkle 1 tsp sweet paprika over it and drizzle with 1 tbsp olive oil.

Bake casserole

Bake the casserole in a preheated oven (electric oven: 200 °C/convection oven: 180 °C) for approx. 30 minutes.

Garnish casserole

Chop 50 g roasted salted almonds. Wash approx. 3 sprigs of oregano, pluck off the leaves. Remove the casserole from the oven and sprinkle with almonds and oregano.
