Description

Sicilian Arancini are fried rice balls with a filling of ground meat, peas and tomato sauce, prepared in the Thermomix®. This Italian finger food with risotto rice and Parmesan is ideal for parties or as a savory snack. Preparation takes about 60 minutes, 30 minutes of which is active work, and yields 12 servings. Suitable as a main course or finger food for lovers of Italian cuisine.

Ingredients (13 ingredients)

  • 250 g Risotto rice
  • 80 g Parmesan, grated
  • 2 EL Butter
  • 1 Stück Onion, large
  • 500 g Ground meat, mixed
  • 150 g Tomato sauce
  • 100 g Peas, frozen
  • 50 g Flour
  • 80 g Breadcrumbs
  • 1 Stück Egg
  • Salt
  • Pepper
  • Vegetable oil

Preparation (8 steps)

Cook rice

Prepare rice in the simmering basket according to package directions. Adjust the amount of water and cooking time to the type of rice.

Prepare rice mixture

Add cooked rice, 80g Parmesan and 2 tbsp butter to the mixing bowl and stir for 10 sec/speed 3. Season with salt and pepper.

Chop onions

Put 1 large onion in the mixing bowl and chop for 3 sec/speed 5.

Brown ground meat

Brown 500g ground meat in a pan with vegetable oil.

Sauté onions and prepare sauce

Add chopped onions to the browned ground meat in the pan and sauté briefly. Add 150g tomato sauce and 100g peas and simmer everything for 5 minutes. Season with salt and pepper.

Whisk eggs

Put 1 egg in the mixing bowl and whisk for 10 sec/speed 4. Season with salt and pepper.

Shape and bread arancini

With damp hands, form balls from the rice mixture (approx. 60-70g rice per ball), press a hollow into them, add some ground meat filling and close the balls with rice. First turn the arancini in 50g flour, then in the whisked egg and then in 80g breadcrumbs.

Fry arancini

Heat vegetable oil in a saucepan and fry the arancini in batches for approx. 3 minutes until golden brown. Remove and drain on kitchen paper.
