Description

This chai syrup is a real treat for cold days! The warming spices such as ginger, cardamom, cloves and cinnamon combine to create a harmonious taste experience. Refined with a hint of vanilla, brown sugar and honey, it is the perfect base for an aromatic chai tea. I love making it during the Christmas season and sharing it with friends and family. It also makes a great gift from the kitchen! The syrup is quick to prepare and keeps well in the fridge.

Ingredients (9 ingredients)

  • 1 piece Ginger (approx. fingernail-sized piece)
  • 0.5 piece Vanilla bean
  • 5 piece Cardamom pods
  • 5 piece Cloves, whole
  • 1 Stange Cinnamon
  • 0.5 tsp Nutmeg
  • 5 Beutel Black tea
  • 70 g Brown sugar
  • 30 g Honey

Preparation (4 steps)

Crush and simmer spices

Thermomix® Setting
10 min/212°F/Speed 1 100

Peel ginger (approx. fingernail-sized piece) and add to the mixing bowl. Scrape out half a vanilla pod and add the pulp. Lightly crush 5 cardamom pods and add to the mixing bowl together with 5 whole cloves, 1 cinnamon stick and 0.5 tsp nutmeg. Add 500 ml water and simmer for 10 min./100°C/speed 1.

Let the tea steep

Add 5 bags of black tea to the mixing bowl and steep for 5 min./none/speed 1.

Reduce syrup

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 70 g brown sugar and 30 g honey and reduce to a syrup for 5 min./100°C/speed 2.

Filter and bottle the syrup

Filter the syrup through a sieve lined with a paper coffee filter and pour hot into sterilized bottles.
