Ingredients (13 ingredients)

  • 250 g Mushrooms
  • 9 Stück Onions (medium-sized)
  • 3 EL Oil
  • 200 g Cream
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 Pck. Puff pastry
  • 800 g Smoked pork loin
  • 1 Stück Egg (room temperature)
  • 1 TL brown Sugar
  • 400 ml Red wine
  • 2 Beutel Mashed potatoes
  • 2 EL Coarse mustard

Preparation (11 steps)

Prepare mushrooms and onion

Thermomix® Setting

Cut 250 g mushrooms and 1 medium-sized onion into coarse pieces and place in the mixing bowl. Chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté mushrooms and onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp oil to the chopped mushrooms and onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Reduce mushroom mixture

Thermomix® Setting
5 min/194°F/Speed 1 90

Add 200 g cream, salt and pepper to taste to the mixing bowl and reduce for 5 min./90°C/speed 1 without a measuring cup. Then transfer to a bowl and let cool.

Prepare puff pastry and roll up smoked pork loin

Roll out 1 pack of puff pastry on a lightly floured work surface to form a rectangle of approx. 25 cm x 35 cm. Spread the cooled mushroom mixture thinly on the puff pastry. Place 800 g smoked pork loin on top, roll up and seal the ends. Preheat the oven to 200°C top/bottom heat.

Decorate and brush puff pastry

Place the rolled up smoked pork loin on a baking sheet lined with baking paper. Cut the remaining puff pastry into strips and place crosswise on the puff pastry casing. Whisk 1 egg (room temperature) and brush the puff pastry all over with it.

Bake smoked pork loin

Bake the smoked pork loin in the preheated oven for approx. 30 min. until the puff pastry is golden brown.

Prepare onions

Peel and quarter 8 medium-sized onions and place in the mixing bowl. Chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp oil and 1 tsp brown sugar to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Reduce red wine onions

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 400 ml red wine to the onions in the mixing bowl and cook for 15 min./100°C/speed 1 without a measuring cup until hardly any liquid remains.

Prepare mashed potatoes

Prepare 2 sachets of mashed potatoes according to the package instructions. Stir in 2 tbsp coarse mustard and season with salt and pepper.

Arrange

Cut the baked smoked pork loin into slices. Serve with mashed potatoes and red wine onions.
