Description

This pork tenderloin in citrus sauce is a dish that always succeeds at home. The combination of tender pork with the orange sauce, sweet and slightly acidic, is simply delicious. Preparing it in the Thermomix® greatly facilitates the process, although the sealing of the meat is done in the pan for a perfect result. Ideal for a special dinner or a festive meal. It can be accompanied with white rice or some steamed potatoes. A dish that you will surely want to repeat!

Ingredients (10 ingredients)

  • 1 piece pork tenderloins
  • 3 piece large oranges
  • 1 piece large onion
  • 150 ml white wine or broth
  • 2 tbsp honey or sugar
  • 1 tbsp mild mustard
  • 1 tsp cornstarch
  • extra virgin olive oil
  • salt
  • pepper

Preparation of the onion

Peel and quarter the onion. Introduce it into the Thermomix® glass and chop for 3 seconds at speed 5.

Sautéed onion

Thermomix® Setting

Add extra virgin olive oil to the Thermomix® glass together with the chopped onion. Sauté for 8 minutes at 120°C and speed 1.

Add white wine and reduce

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Incorporate the white wine (or broth) into the glass and program 5 minutes at Varoma temperature and speed 1, without the measuring cup, so that the alcohol evaporates.

Incorporate orange juice and zest

Thermomix® Setting
15 min/212°F/Speed 2 100

Add the juice of the oranges and the zest of one orange to the glass. Program 15 minutes at 100°C and speed 2.

Add honey, mustard and cornstarch

Thermomix® Setting
5 sec/keine/Speed 4

Add the honey (or sugar), the mild mustard and the cornstarch dissolved in a little cold water to the glass. Mix for 5 seconds at speed 4.

Reduce the sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Program 5 minutes at 100°C and speed 2 to reduce the sauce and thicken it. Correct salt and pepper to taste.

Seal the tenderloin

Seal the tenderloins in a pan with very hot extra virgin olive oil, turning them over and over, until they are golden brown on the outside.

Cook the tenderloin in the sauce

Thermomix® Setting
15 min/212°F/Speed cuchara 100 Reverse

Place the sealed tenderloins in the Thermomix® glass with the sauce. Program 15 minutes at 100°C, spoon speed and reverse spin. Turn the tenderloins halfway through cooking.

Rest and serve

Let the tenderloin rest in the sauce for 5 minutes inside the switched-off Thermomix® glass. Cut into thick slices and serve with the hot sauce. Garnish with orange zest.
