Description

This peach tiramisu is a fresh and delicious variation of the classic Italian dessert, perfect for summer! The mascarpone cream, enriched with pieces of peaches in syrup, goes perfectly with the ladyfingers soaked in fruit juice. I often prepare it when I have guests for dinner, because it is easy to make and can be prepared in advance. The final touch with fresh peaches and mint leaves makes it even more inviting. Try it, it will win you over! A fresh and light dessert, ideal for ending a summer dinner in style. It is prepared in a short time and requires no cooking.

  • Mascarpone
  • Eggs
  • Peaches in syrup
  • Sugar
  • Peach fruit juice
  • Mint

Separation and preparation of the eggs

Insert the eggs into the bowl and separate the yolks from the whites. Set aside the egg whites in a bowl and the yolks in another.

Whip the egg whites until stiff

Insert the egg whites into the clean and dry bowl. Whisk until stiff with the butterfly for 3 Min./Stufe 3.5. Transfer the whipped egg whites to a bowl and set aside.

Whip the yolks with the sugar

Insert the yolks and sugar into the bowl. Whisk for 3 Min./Stufe 3 until a light and fluffy mixture is obtained.

Soften the mascarpone

Thermomix® Setting
20 Sec./Speed 3

Insert the mascarpone into the bowl and work for 20 Sec./Stufe 3 to soften it. Transfer the mascarpone to a bowl.

Combine yolks and mascarpone

Thermomix® Setting

Add the whipped yolks to the softened mascarpone and mix gently for 30 Sec./Stufe 2.

Incorporate the whipped egg whites

Gently incorporate the whipped egg whites into the mascarpone and yolk cream for 30 Sec./Linkslauf Stufe 1, until a soft but stable mixture is obtained.

Add the peaches

Thermomix® Setting
20 Sec./Linkslauf Speed 1 Reverse

Cut the peaches in syrup into cubes (keeping one for decoration) and add them to the cream. Mix gently for 20 Sec./Linkslauf Stufe 1.

Assembly of the tiramisu

Quickly dip the ladyfingers in the peach juice. Arrange a layer of ladyfingers on the bottom of the glasses or cups, alternating with a layer of mascarpone and peach cream. Repeat the layers.

Final decoration

Finish with a layer of cream, decorate with peach wedges and mint leaves to taste. Leave to cool in the refrigerator for at least 2 hours before serving.
