Description

A creamy and flavorful parmesan soup, perfect for a winter day.

Ingredients (10 ingredients)

  • 1 Stück Onion
  • 1 Zehe Garlic
  • 20 g Olive oil
  • 2 Stück Potatoes
  • 700 ml Vegetable stock
  • 1 Zweig Thyme
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 200 g Cream
  • 200 g Parmesan, grated

Preparation (7 steps)

Chop onion and garlic

Peel and quarter 1 onion and place 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Add 20 g of olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and chop vegetables

Add 150 g celery and 150 g carrots in pieces to the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula.

Prepare vegetable stock

Add 700 ml vegetable stock, 1 bay leaf, 1 sprig of thyme, 1 pinch of nutmeg, salt and pepper to the mixing bowl and cook for 15 min./100°C/speed 1.

Puree soup

30 sec/Speed 8-10

Remove bay leaf and thyme sprig. Add 100 g cream and 100 g processed cheese to the mixing bowl and puree for 30 sec./speed 8-10, slowly increasing the speed.

Add and melt cheese

Thermomix® Setting
2 min/140°F/Linkslauf Speed 2 140°F Reverse

Add 50 g grated Parmesan to the mixing bowl and stir in for 2 min./60°C/reverse speed speed 2.

Serve

Serve the soup garnished with fresh herbs.
