Tomato soup with Amaranth Balls

Ingredients (17 ingredients)

  • 50 g Amaranth
  • 1 TL Salt
  • 70 g Frozen peas
  • 30 g Parmesan (in one piece)
  • 0.5 Bund Parsley
  • 30 g Chickpea flour (alternatively oat flour)
  • 1 EL Wholemeal spelt flour
  • Pepper from the mill
  • 0.5 Stück Zest of 1/2 organic lemon
  • 1 Stück Onion
  • 1 Stück Garlic clove
  • 1 EL Olive oil
  • 1 EL Tomato paste
  • 500 g Sieved tomatoes (from a jar)
  • 400 ml Vegetable broth
  • 1 TL Dried oregano
  • 2 EL Greek yogurt (10% fat)

Preparation (15 steps)

Cook amaranth

Rinse the amaranth in a sieve under cold water and bring to a boil once in a saucepan in 150 ml of lightly salted water. Then simmer with the lid closed over low heat for another 15 to 20 minutes. Then pour into a sieve, rinse under cold water and drain well.

Grate Parmesan

Put Parmesan in the mixing bowl and grate finely: 10 sec./level 10.

Transfer Parmesan

Transfer grated Parmesan and set aside.

Chop parsley

Wash parsley, pat dry, pluck the leaves and put in the mixing bowl. Chop 3 sec./level 8.

Remove parsley

Remove half of the parsley and set aside.

Prepare amaranth balls

Thermomix® Setting

Put amaranth, peas, Parmesan, chickpea flour and wholemeal spelt flour in the mixing bowl. Add salt, pepper and lemon zest. Chop 15 sec./level 5.

Form amaranth balls

Form about 12 balls from the mixture with moistened hands and let them rest for about 10 minutes.

Chop onion and garlic

Peel the onion, halve and put in the mixing bowl with the garlic clove. Chop 3 sec./level 5.

Sauté onion and garlic

Add olive oil and sauté for 3 min./120°C/level 1.

Sauté tomato paste

Add tomato paste and sauté for 1 min./120°C/level 1.

Cook soup

Thermomix® Setting
10 min/212°F/Speed 1 212°F

Add sieved tomatoes, vegetable broth, salt, pepper and oregano. Cook 10 min./100°C/level 1.

Cook amaranth balls

Bring plenty of salted water to a boil in a saucepan and let the amaranth balls simmer in it over low heat for 5 to 7 minutes until cooked. Lift out with a slotted spoon and drain.

Puree soup

Puree soup for 30 sec./level 8-10, slowly increasing the speed.

Season soup

Season soup with salt and pepper.

Arrange

To serve, arrange the soup in deep plates. Garnish with 1 tbsp of yogurt each and the amaranth balls and sprinkle with the reserved parsley.
