Description

This creamy carrot soup is a simple and warming dish, ideal as a starter or light main course. Prepared with fresh carrots, onions and spices, it is quick to prepare in the Thermomix®. The soup is vegetarian and can easily be made vegan by using plant-based cream. Perfect for cold days and a healthy meal.

Ingredients (9 ingredients)

  • 1 EL Oil or Butter
  • 0.5 Stück Onion
  • 500 g Carrots
  • 6 dl Water
  • 1.5 KL Salt or Vegetable bouillon
  • 1 Prise Sugar
  • Curry, Cayenne pepper
  • 0.1 dl Cream
  • Flat-leaf parsley

Preparation (5 steps)

Chop onions

Put 1/2 onion in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add 1 tablespoon of oil or butter to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and steam carrots

20 min/212°F/Speed 1 212°F

Cut 500 g carrots into slices and add to the mixing bowl. Add 6-7 dl of water and cook for 20 min./100°C/level 1.

Purée soup

30 sec/Speed 8-10

Add 1-1½ tsp salt or vegetable bouillon, 1 pinch of sugar, a little curry and cayenne pepper to the mixing bowl and purée for 30 sec./level 8-10.

Refine and arrange soup

5 min/194°F/Speed 1 194°F

Add -1 dl of cream to the mixing bowl and heat for 5 min./90°C/level 1. Garnish the soup with flat-leaf parsley and serve.
