These homemade chicken and vegetable sorrentinos are a comforting delight, perfect for a family meal or a special occasion. The fresh, homemade dough embraces a tasty and nutritious filling of tender chicken and sautéed vegetables. The recipe, although it requires a bit of time, is rewarding and the end result is much better than any store-bought pasta. Go ahead and prepare them and enjoy an authentic and flavorful Italian dish. They are ideal to serve with your favorite sauce and a little grated cheese!

Ingredients (9 ingredients)

  • 250 gramos 000 flour
  • 120 centímetros cúbicos water
  • 1 cucharada sopera oil
  • 1 piece egg
  • 1 pinch salt
  • 1 piece chicken supreme
  • 1 rama celery
  • 1 piece carrot
  • 1 clove garlic

Cooking the chicken and vegetables

Thermomix® Setting
30 min/212°F/Speed 1 100

Place the chicken supreme, the clean celery stalk and the peeled carrot in the Thermomix bowl. Add water to cover the ingredients. Program 30 Min./100°C/Stufe 1. Once the time is finished, remove the chicken and vegetables from the bowl and reserve the broth.

Preparing the onion

Peel the onion and cut it into quarters. Place it in the Thermomix bowl and program 3 Sek./Stufe 5 to chop it. Add a tablespoon of oil and sauté 3 Min./120°C/Stufe 1.

Sautéing garlic and leek

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel and chop the garlic clove. Clean and chop the leek. Add the garlic and leek to the Thermomix bowl. Program 3 Min./120°C/Stufe 1. If necessary, add a little of the chicken cooking broth to prevent it from sticking.

Adding the chicken

Chop the cooked chicken into very small pieces. Add the chopped chicken to the Thermomix bowl with the vegetables. Program 2 Min./120°C/Stufe 1 to sauté and integrate the flavors. Remove the filling from the bowl and let it cool.

Preparing the dough

2 min/Kneading speed

Place the flour in the Thermomix bowl. Add the water, oil, egg and salt. Program 2 Min./Knetstufe. Remove the dough from the bowl, form a ball and wrap it in plastic wrap. Let it rest for 15 minutes.

Stretching the dough

Divide the dough into two parts. Stretch each part with a dough sheeter to point 8, passing the dough about 2 or 3 times for each number.

Filling the sorrentinos

Place one of the sheets of dough on a previously floured sorrentino mold. Fill each space with the cold chicken filling, pressing lightly. Moisten the edges of the dough with water.

Closing the sorrentinos

Cover the sorrentinos with the second sheet of stretched dough. Pass a rolling pin over it to cut the sorrentinos.

Cooking the sorrentinos

In a large pot, boil plenty of water. Cook the sorrentinos for 4-5 minutes, taking care that the water does not make very large bubbles.

Serving

Sauté the cooked sorrentinos with the chosen sauce and a little cooking water. Serve immediately.
