Description

This hearty ground meat and bean soup is real comfort food! I especially like to make it when it's cold outside. The combination of ground meat, beans, tomatoes and a good dose of spiciness warms you from the inside out and simply tastes delicious. The soup is quick to prepare and is perfect for parties or as a filling lunch. If you don't like it so spicy, you can of course use a little less paprika. A dollop of sour cream or yogurt also goes perfectly with it. And the best thing: it can be prepared very well and tastes almost even better when warmed up!

Ingredients (13 ingredients)

  • 300 g Leek
  • 1 piece Onion
  • 2 clove Garlic
  • 850 ml Beans (canned)
  • 2 tbsp Sunflower oil
  • 1 kg Ground meat
  • 2 tbsp Flour
  • 1 l Vegetable broth
  • 850 ml Tomatoes (canned)
  • 2 pack Mini-Cabanossi
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Hot paprika

Preparation (4 steps)

Prepare leek, onion and garlic

Clean the leek, cut into rings and wash thoroughly. Peel the onion, halve and place in the mixing bowl with the garlic cloves. Chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté the vegetables

Add sunflower oil and sauté for 3 min./120°C/speed 1.

Fry ground meat

Fry the ground meat in a separate pan with a little oil for about 10 minutes until it is brown and crumbly. After about 8 minutes, add the sautéed vegetables from the mixing bowl and fry briefly. Dust with flour and sauté briefly.

Finish soup

Add the fried ground meat with the vegetables to the mixing bowl. Add vegetable broth, leek, tomatoes (roughly chopped), beans and cabanossi. Season with salt, pepper and hot paprika. Simmer for 10 min./100°C/speed 1 in reverse, stirring occasionally.

This hearty ground meat and bean soup is a classic in our family, which is especially popular on cold autumn and winter days. I took the recipe from my grandma, who in turn had it from her mother. Over the years it has changed a bit, but the basic idea - a hearty, warming soup with lots of flavor - has remained. The list of ingredients may seem long at first glance, but each component contributes to the overall result. The leek provides a mild, slightly sweet note, the onion and garlic form the aromatic base. The beans, preferably kidney beans or a mixture of different types of beans, bring a pleasant texture and are very filling. The ground meat is of course the star of the soup and provides the hearty base. The flour serves as a binding agent and ensures a creamy consistency. The vegetable broth forms the liquid base and enhances the flavor. The canned tomatoes bring acidity and sweetness to the soup, while the mini cabanossi provide a smoky flavor. Salt, pepper and hot paprika round off the whole thing and give the soup the finishing touch. When preparing in the Thermomix®, it is important to add the ingredients in the correct order. First, onion and garlic are chopped and sautéed to release their aromas. The ground meat is fried separately so that it is nice and brown and crumbly. Then all the ingredients are added to the mixing bowl and the soup simmers slowly. The reverse is important so that the beans do not overcook. While cooking, the soup should be stirred occasionally to ensure that nothing sticks to the bottom. If you like it vegetarian or vegan, you can replace the ground meat with a plant-based alternative, such as soy granules or lentils. Instead of cabanossi, you can use smoked paprika powder to achieve a similar smoky taste. You can also vary the spices: cumin, chili or oregano go perfectly with this soup. The ground meat and bean soup is best served hot, with a dollop of sour cream or yogurt and a piece of fresh bread. Nachos or tortilla chips also go well with it. If you like it a little more hearty, you can sprinkle some grated cheese on top. The soup can be prepared well in advance and tastes almost even better when warmed up. It can be stored in the refrigerator for up to three days or frozen. To warm up, simply heat in a pot or in the microwave.
