Description

This hearty sausage and bean casserole is a comforting and satisfying meal, perfect for a chilly evening. The combination of savory sausages, smoky paprika, and sweet barbecue sauce creates a flavor explosion that's sure to please. Topped with creamy mashed potatoes and melted cheddar cheese, it's a dish that the whole family will love. It's also a great way to use up leftover potatoes! This casserole is easy to prepare and can be made ahead of time, making it ideal for busy weeknights. I love adding a sprinkle of fresh chives for a pop of color and flavor.

Ingredients (12 ingredients)

  • 2 tsp sunflower oil
  • 1 piece onion
  • 8 piece pork sausages
  • 2 clove garlic cloves
  • 2 tsp hot smoked paprika
  • 2 can baked beans
  • 3 tbsp barbecue sauce
  • 1 kg potatoes
  • 50 g butter
  • 4 tbsp milk
  • 75 g grated cheddar
  • 2 tbsp chopped chives

Preparation (10 steps)

Potatoes prepare for cooking

Peel and chop the potatoes into even-sized pieces. Place the chopped potatoes in a large bowl and cover with cold water to prevent browning. This step ensures the potatoes cook evenly and have a great texture.

Mashed potatoes

20 min/212°F/Speed 1 100

Place 1 kg of chopped potatoes into the mixing bowl. Add 500 ml of water. Cook for 20 Min./100°C/Stufe 1. After cooking, drain the potatoes using the simmering basket. Return the potatoes to the mixing bowl. Add 50g butter and 4 tbsp milk. Mix for 20 Sek./Stufe 3 until smooth. Set aside and keep warm.

Onion preparation

Peel and quarter the onion. Place the quartered onion into the mixing bowl and chop for 3 Sek./Stufe 5. Use the spatula to scrape down the sides of the mixing bowl.

Sautéing the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tsp sunflower oil to the mixing bowl with the chopped onion. Sauté for 3 Min./120°C/Stufe 1.

Sausage preparation

Remove the sausage meat from the casings and break it into small pieces. Add the sausage pieces to a frying pan and fry over medium heat for 4 mins until browned all over. Set aside.

Garlic preparation

Add 2 garlic cloves to the mixing bowl and chop for 3 Sek./Stufe 7. Use the spatula to scrape down the sides of the mixing bowl.

Adding garlic and paprika

Thermomix® Setting
1 min/248°F/Speed 1 120

Add the browned sausage pieces, chopped garlic and 2 tsp hot smoked paprika to the mixing bowl. Cook for 1 Min./120°C/Stufe 1.

Adding beans and barbecue sauce

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour in 2 x 410g cans baked beans and 3 tbsp barbecue sauce to the mixing bowl. Cook for 5 Min./100°C/Stufe 1/Linkslauf until just about to simmer.

Assembling the casserole

Preheat the oven to 200C/180C/gas 6. Spoon the sausage and bean mixture into an ovenproof tin or dish (ours was 20x20cm), then spoon over the mashed potato and sprinkle 75g grated cheddar on top. Bake in the oven for 25-30 mins until bubbling round the edges and the cheese is golden.

Final touches

Remove from the oven and scatter over 2 tbsp chopped chives, if using. Serve hot.
