Description

These three cheeses soufflés are a real delight for cheese lovers. The combination of cantal, roquefort and grated gruyere offers an explosion of flavors in the mouth.   • 60 noix Butter
  • 75 g Flour
  • 20 cl Water
  • 50 g Cantal
  • 50 g Roquefort
  • 50 g Grated gruyere
  • 4 piece Chicken white(s)
  • 2 c. à soupe Fresh cream
  • 8 brin(s) Chives
  • to taste Nutmeg
  • Salt
  • Pepper

Preparation of the mold and cheeses

Preheat the oven to 210°C (th. 7). Carefully butter a soufflé dish. Grate the cantal and crumble the roquefort. Finely chop the chives.

Preparation of the béchamel in the Thermomix

Put the butter in the Thermomix bowl and melt it for 3 Min./50°C/Stufe 2.

Cooking the base of the béchamel

Add the flour to the bowl and cook for 3 Min./90°C/Stufe 3.

Adding milk and water

Add the milk and water to the bowl and mix for 5 Min./90°C/Stufe 3.

Incorporating cheeses and cream

Add the grated cantal, crumbled roquefort, grated gruyere, fresh cream, a pinch of ground nutmeg, salt and pepper to the bowl. Mix for 2 Min./60°C/Stufe 3.

Adding the egg yolks and chives

Remove the bowl from the Thermomix. Add the egg yolks and chopped chives. Mix gently by hand.

Beating the egg whites until stiff

Clean and thoroughly dry the Thermomix bowl. Insert the whisk. Add the egg whites and a pinch of salt. Beat the egg whites until stiff for 3 Min./Stufe 3.5.

Incorporating the egg whites

Remove the whisk. Gently incorporate the egg whites into the cheese preparation using a spatula.

Baking in the oven

Pour the batter into the buttered soufflé dish and bake. Cook, avoiding opening the oven during cooking, for 30 to 35 minutes. Serve immediately after removing from the oven.
