Description

This vegetarian, hearty onion soup from the Thermomix® warms you up on cold days. The main ingredients are onions, butter, vegetable broth and white wine, topped with cheese and toast. In 50 minutes, a delicious meal for 4 people is created. Ideal as a starter or main course for the whole family.

Ingredients (9 ingredients)

  • 500 g Onion(s)
  • 1 EL Butter
  • 800 ml Vegetable broth
  • 150 ml White wine
  • 4 Scheibe/n Toast bread
  • 4 EL Gouda, grated
  • 4 EL Parmesan, grated
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (6 steps)

Prepare onions

Thermomix® Setting
3 sec/Speed 5

Peel and quarter 500 g onions. Place the quartered onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp of butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook soup

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 800 ml vegetable broth and 150 ml white wine to the onions in the mixing bowl. Season with salt and pepper and simmer for 15 min./100°C/speed 1.

Prepare toast

While the soup is cooking, cut out 4 slices of toast to cup size and toast in the toaster or oven until golden brown.

Serve and gratinate soup

Fill the finished soup into cups and place a toast on top of each soup. Now sprinkle the whole thing with 4 tbsp of grated Gouda and 4 tbsp of grated Parmesan and gratinate briefly in the oven until the cheese has a nice color and has melted.

To serve

To serve, place the soup cup on a saucer. Be careful, the cup and soup are very hot!
