Description

This comforting Andean soup, also known as Andean pisca, is a traditional Venezuelan dish perfect for cold days. Prepared with chicken broth, potatoes, fresh cheese and a touch of coriander, this soup is nutritious and delicious. The addition of a poached egg in each dish gives it a special and creamy touch. It is a simple and inexpensive recipe that is prepared in a short time with the Thermomix®. Ideal for an energizing breakfast or a light dinner. Go ahead and try this Andean delight!

Ingredients (11 ingredients)

  • 1 litro chicken broth
  • 4 piece potatoes
  • 200 gramos cheese
  • 1 rama chives
  • 3 dientes garlic
  • 2 cucharadas butter
  • 1 litro whole milk
  • 2 ramas fresh coriander
  • 1 pinch salt
  • 1 pinch pepper
  • 4 piece eggs

Preparation of ingredients

Peel the potatoes and cut into small cubes. Cut the cheese into similar cubes. Finely chop the garlic cloves and fresh coriander. Cut the chives into thin slices. Reserve all the chopped ingredients.

Cooking potatoes and coriander

Pour 1 liter of chicken broth into the Thermomix glass. Add the chopped potatoes and 1 sprig of chopped fresh coriander. Cook 20 Min./100°C/Stufe 1.

Sautéing chives and garlic

Add 2 tablespoons of butter to the Thermomix glass. Add the chopped chives and garlic. Sauté 3 Min./120°C/Stufe 1.

Integration of ingredients

Check that the potatoes are tender. Pour the sautéed chives and garlic into the Thermomix glass. Stir 10 Sek./Stufe 3 to integrate all the ingredients.

Adding milk and final cooking

5 min/194°F/Speed 2 90

Add 1 liter of whole milk to the Thermomix glass. Stir 10 Sek./Stufe 3 to integrate. Cook 5 Min./90°C/Stufe 2 until the soup boils.

Poach the eggs

3 min/194°F/Linkslauf Speed 1 90 Reverse

Lower the speed to Stufe 1. Carefully pour one egg into the Thermomix glass per person. Cook 3 Min./90°C/Linkslauf Stufe 1. Carefully remove the eggs.

Serve

Serve the hot soup in deep dishes. Place a poached egg in each dish. Sprinkle fresh cheese and chopped coriander on top. Serve immediately.
