Description

This clear pak choi soup is a comforting and flavorful recipe, perfect for cold days. Pak choi, also known as Chinese cabbage, provides a crispy texture and a mild flavor that is perfectly complemented by ginger, garlic and a touch of chili. Soy sauce and rice vinegar add a delicious umami touch, while fresh lemon juice adds a point of acidity that enhances all the flavors. Ingredients (13 ingredients)

  • 7 hojas pak choi
  • 3 tallos spring onions
  • 2 dientes garlics
  • 1 l vegetable stock
  • 1 hoja bay leaf
  • 15 g ginger
  • 30 ml soy sauce
  • 15 ml rice vinegar
  • 7 g chili flakes
  • 2 piece star anise
  • 1 rama cinnamon
  • 2 piece lemons
  • to taste Sesame seeds

Preparation (6 steps)

Preparation of Pak Choi, Spring Onion and Garlic

Separate the pak choi leaves and wash them well. Dry and chop them. Chop the spring onion and garlic too. Reserve.

Sauté Spring Onion and Garlic

Add the spring onion and garlic to the Thermomix bowl. Chop for 3 seconds at speed 7.

Add Pak Choi and Ginger

Add the chopped pak choi and ginger (grated or in small pieces) to the bowl. Cook for 5 minutes at 120°C at speed 1.

Incorporate Spices and Liquids

Add the star anise, bay leaf, cinnamon stick, vegetable stock, soy sauce and rice vinegar to the Thermomix bowl.

Cook the Soup

Thermomix® Setting
10 min/212°F/Speed 1 100

Cook the soup for 10 minutes at 100°C at speed 1. Stir occasionally with the spatula.

Remove Spices and Serve

Remove the whole spices (cinnamon, bay leaf, star anise) from the bowl. Serve the hot soup, garnished with chili flakes, sesame seeds and a generous squeeze of lemon juice.
