Description

This creamy vegetable soup with shepherd's cheese is an absolute highlight on warm days! I especially like to make it when I have fresh vegetables in the garden. The zucchini, peppers and tomatoes are pureed into a velvety soup in the Thermomix® and the shepherd's cheese provides a spicy note. The spring onions give the whole thing a fresh kick. The recipe is super easy and quick to prepare, so it's perfect for a light lunch or dinner. If you like, you can add a dash of cream, but it tastes delicious even without it!

Ingredients (7 ingredients)

  • 2 piece Zucchini
  • 1 piece Pepper
  • 3 bunch Spring onion(s)
  • 250 g Tomato(es)
  • 125 g Shepherd's cheese
  • 100 g Butter
  • 500 ml Water

Preparation (6 steps)

Prepare vegetables

Wash the zucchini, peppers and tomatoes and cut into pieces about 3 x 3 cm in size. Also wash the spring onions and cut into fine slices. Cut the shepherd's cheese into small cubes.

Cook vegetables

Thermomix® Setting
15 min/212°F/Speed 1 100

Put 500 ml water into the mixing bowl. Add zucchini, peppers and tomatoes. Set the Thermomix to 100°C and cook for 15 Min./100°C/level 1.

Puree soup

Thermomix® Setting
2 min/Speed 8

After the cooking time has elapsed, add the butter and shepherd's cheese to the mixing bowl. Then puree for 2 Min./level 8.

Mix in spring onions

Thermomix® Setting
20 sec/Speed 6

Add the sliced spring onions to the mixing bowl and stir in for 20 Sec./level 6.

Adjust consistency

Check the consistency of the soup and add a little more water if necessary if it is too thick. Briefly mix on level 3.

Serve

Fill the vegetable soup with shepherd's cheese into bowls and serve. Garnish with fresh herbs as desired.
