Description

This Arabic lentil soup is a vegetarian dish that is ideal as a starter or main course. The soup is easy to prepare and takes about 50 minutes. It is rich in lentils, vegetables and spices and is perfect for the cold season. The soup is designed for 4 servings and can be easily adjusted.

Ingredients (14 ingredients)

  • 1 Stück Onion(s)
  • 2 Zehe/n Garlic
  • 1 Stück Chili pepper(s)
  • 3 Stück Parsnip(s)
  • 1 Stange/n Leek
  • 2 große Carrot(s)
  • 2 TL Oil of choice
  • 200 g Lentils, red
  • 1.2 Liter Water or vegetable broth
  • 1 TL Salt
  • Pepper
  • 1 TL Ground cumin
  • 1 EL Lemon juice
  • Coriander, chopped

Preparation (6 steps)

Chop onion and garlic

Peel 1 onion and chop roughly, place in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Sauté vegetables

Add 2 tsp of oil of choice to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add vegetables and sauté

Add 1 finely chopped chili pepper (seeded), 3 diced parsnips, 2 diced carrots and 1 roughly chopped leek to the mixing bowl and sauté for 5 min./120°C/speed 1.

Add lentils and water and simmer

Add 200 g red lentils and 1.2 liters of water or vegetable broth to the mixing bowl and simmer for 30 min./100°C/speed 1.

Puree soup and season

Puree the soup for 30 sec./speed 8-10. Season with 1 tsp salt, pepper to taste, 1 tsp level ground cumin and 1 tbsp lemon juice.

Serve the soup garnished with chili strips and chopped coriander.
