Description

This warming lentil soup with coconut, prepared in the Thermomix®, is a vegetarian and vegan main course with red lentils, carrots and coconut milk. Preparation takes about 35 minutes and yields 4 servings. Ideal for light cuisine or as a filling family meal in the cold season. The soup is pleasantly spicy due to ginger and optional chili.

Ingredients (15 ingredients)

  • 500 ml Vegetable broth
  • 200 g red lentils
  • 200 g Carrots
  • 400 g Coconut milk
  • 400 g diced tomatoes
  • 1 Stück red onion
  • 1 Zehe Garlic
  • 20 g Ginger
  • 2 EL Vegetable oil
  • 2 TL Turmeric
  • 1 TL Cumin, ground
  • 0.5 TL Sugar
  • 0.25 TL Chili, ground
  • 1 EL Lime juice
  • 1 Prise Salt

Preparation (7 steps)

Prepare lentils

Wash 200 g red lentils in a sieve under cold water and drain. Set aside.

Prepare vegetables

Peel 1 red onion and 1 clove of garlic and quarter. Peel 2 carrots (approx. 200 g) and cut into coarse pieces. Peel 20 g ginger and chop roughly. Squeeze 1 lime and set the juice aside.

Chop onion, garlic and ginger

Put onion, garlic and ginger in the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Add 2 tbsp vegetable oil and the carrot pieces to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add lentils and spices

Add the washed lentils, 2 tsp turmeric, 1 tsp cumin and ¼ tsp chili powder to the mixing bowl and stir in for 2 min./120°C/speed 1.

Cook soup

20 min/212°F/Speed 1 100 Reverse

Add 500 ml vegetable broth, 400 g diced tomatoes, 1 pinch of salt and ½ tsp sugar to the mixing bowl and simmer for 20 min./100°C/speed 1 reverse.

Add coconut milk and season

5 min/194°F/Speed 1 90 Reverse

Add 400 g coconut milk to the mixing bowl and heat for 5 min./90°C/speed 1 reverse. Season with salt, chili and 1 tbsp lime juice.
