Description

This warming root vegetable soup is real soul food for cold days! I love how the sweetness of the parsnip and carrots harmonizes with the slight spiciness of the horseradish. The soup is rich in healthy ingredients and can be wonderfully prepared with seasonal vegetables. Perfect as a main course or as a warming meal after a long walk in winter. The preparation takes a little time, but it's worth it! If you like it spicier, you can add a little more chili pepper. A dash of rapeseed oil ensures a beautiful creaminess.

Ingredients (17 ingredients)

  • 1 piece Parsnip(s)
  • 2 piece Parsley root(s)
  • 3 piece Carrot(s)
  • 5 piece Potato(es)
  • 1 piece Red beetroot fresh
  • 0.5 Knolle/n Celery
  • 1 piece Onion(s)
  • 1 Zehe/n Garlic
  • 2 cm Ginger fresh
  • 1 piece Chili pepper fresh or dried
  • Vegetable broth instant
  • 1 Schuss Rapeseed oil
  • Salt
  • Caraway
  • Marjoram
  • 1.5 Liter Water
  • Horseradish natural from the jar or freshly grated

Preparation (8 steps)

Prepare vegetables

Clean the parsnip, red beetroot, parsley root, celery, carrots, ginger and potatoes and cut into approx. 1 cm cubes. Set aside.

Chop onion and garlic

Peel the onion, halve it and put it in the mixing bowl. Add garlic clove and chop for 3 sec./speed 5. Scrape down the side with the spatula.

Sauté onion and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add rapeseed oil and sauté for 3 min./120°C/speed 1.

Add vegetables and spices

Add the prepared vegetables, ginger, chili pepper, vegetable broth instant, salt, caraway, marjoram and water to the mixing bowl.

Cook soup

Thermomix® Setting
45 min/212°F/Speed 1 100

Cook the soup for 45 min./100°C/speed 1 until the vegetables are crisp-tender to soft.

Thicken soup

Thermomix® Setting
10 sec/Speed 4 Reverse

Thicken the soup for 10 sec./speed 4 in reverse, helping with the spatula. The potatoes should be mashed a little.

Finish soup

Thermomix® Setting
5 min/194°F/Speed 1 90

Let the soup simmer for another 5 min./90°C/speed 1 to increase the creaminess.

Distribute the soup on plates and serve with a dollop of horseradish.
