Description

This spaghetti dish is a classic for a reason! It's quick, easy, and packed with flavor. The combination of garlic, olive oil, and chili pepper creates a delightful warmth that's perfect for a simple weeknight meal. I've been making this for years, and it's always a hit. Feel free to adjust the amount of chili to your liking – I like mine with a good kick! A sprinkle of fresh parsley adds a touch of freshness to this comforting pasta dish. It's ready in under 30 minutes!

Ingredients (5 ingredients)

  • 0.5 pack thick spaghetti
  • 6 tbsp extra-virgin olive oil
  • 1 piece hot chile pepper, seeded and minced
  • 1 clove garlic, minced
  • 0.25 cup chopped fresh Italian parsley

Preparation (6 steps)

Cook the Spaghetti

Bring a large pot of salted water to a boil (outside of the Thermomix). Cook the spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain, reserving 240ml (1 cup) of the cooking water.

Mince Garlic and Chili

Add 1 clove of garlic to the Thermomix bowl and chop for 3 Sec./Stufe 7.

Sauté Garlic and Chili

Add 4 tablespoons of olive oil and 1 minced hot chili pepper to the Thermomix bowl. Sauté for 3 Min./120°C/Stufe 1.

Add Pasta Water and Toss

Pour 60ml (1/4 cup) of the reserved pasta water into the Thermomix bowl and stir for 10 Sec./Stufe 2.

Combine Pasta and Parsley

20 sec/Linkslauf Speed 1 Reverse

Add the drained spaghetti and ¼ cup chopped fresh Italian parsley to the Thermomix bowl. Toss gently using the spatula for 20 Sec./Linkslauf Stufe 1, adding extra pasta water if needed to keep the spaghetti moist but not soggy.

Serve

Plate the spaghetti. Top with the remaining 2 tablespoons of olive oil, if desired. Serve immediately.
