Description

This is a dish that I often prepare when I want to impress my guests with an authentic taste of the sea. Spaghetti with seafood is a classic of Italian cuisine, and this version is particularly fragrant and full of flavor. I always use very fresh seafood, such as mussels, clams, prawns, shrimp and squid, to guarantee an exceptional result. Preparation takes a little time, but the end result is worth every minute spent in the kitchen. Perfect for a special dinner or a Sunday family lunch. A tip? Accompany it with a good glass of dry white wine!

Ingredients (12 ingredients)

  • Large spaghetti
  • Carpet shell clams
  • Mussels
  • Prawns
  • Squid
  • Shrimp
  • Cuttlefish
  • Dry white wine
  • Cherry tomatoes
  • 1 clove Garlic
  • Extra virgin olive oil (EVO)
  • Parsley

Preparation (12 steps)

Initial preparation of the seafood

Remove the beard from the mussels and rinse them well together with the clams. Put the mussels and clams in a pan (not in the Thermomix) with a drizzle of extra virgin olive oil, a clove of garlic and a sprig of parsley. Cover and cook over high heat for a couple of minutes. Leave on the switched off heat for another minute.

Shell and filter the cooking water

Shell most of the mussels and clams, setting aside some with the shell for the final decoration. Filter the cooking water from the mussels and clams and set aside.

Cleaning the squid and cuttlefish

Clean the squid by removing the head, innards and backbone. Rinse them well under running water and cut them into rings. Also cut the cuttlefish into strips.

Cleaning of shrimp and prawns

Clean the shrimp by removing the head and carapace. Clean the prawns by removing the head, carapace and intestinal thread.

Preparation of the sautéed mixture

Put a clove of garlic in the bowl and chop: 3 Sec./Stufe 7. Add the extra virgin olive oil and sauté: 3 Min./120°C/Stufe 1.

Cooking the squid and cuttlefish

Add the squid and cuttlefish to the bowl and cook: 5 Min./120°C/Stufe 1.

Deglazing with white wine

Deglaze with the dry white wine: 2 Min./Varoma/Stufe 1, without the measuring cup to allow the alcohol to evaporate.

Addition of cherry tomatoes and cooking

Add the cherry tomatoes cut in half and cook: 10 Min./100°C/Stufe 1.

Final cooking with mussels and clams

Add the filtered water from the mussels and clams and the shelled mussels and clams. Cook: 3 Min./100°C/Stufe 1/Linkslauf.

Season the pasta

Cook the large spaghetti in abundant salted water. Drain them al dente and pour them into the bowl with the sauce. Gently mix with the spatula to mix everything well.

Plate and serve

Plate the spaghetti with seafood, decorate with the mussels and clams with the shell set aside and flavor with chopped parsley. Serve immediately.
