Description

This spicy chorizo cheese dip is a guaranteed crowd-pleaser! I've been making it for years, and it's always a hit at parties and gatherings. The combination of savory chorizo, colorful peppers, and a blend of creamy cheeses creates an irresistible flavor explosion. It's perfect served warm with tortilla chips or crusty bread. Feel free to adjust the amount of jalapenos to your liking – I like mine with a good kick! This dip is also great for game day or any casual get-together. It's quick, easy, and oh-so-delicious!

Ingredients (9 ingredients)

  • 227 g fresh pork chorizo
  • 0.5 cups sliced green onions, white and lighter green parts (green parts reserved)
  • 1 piece red bell pepper, diced
  • 2 piece poblano chile peppers, diced
  • 2 piece jalapeno peppers, diced
  • 113 g cream cheese
  • 227 g shredded Monterey Jack cheese
  • 113 g shredded sharp Cheddar cheese
  • 0.25 cups sour cream

Preparation (4 steps)

Chorizo and Vegetables Preparation

Place the fresh pork chorizo, sliced green onions (white and lighter green parts), diced red bell pepper, diced poblano chile peppers, and diced jalapeno peppers into a skillet. Cook over medium-high heat, breaking up the chorizo into small pieces, until the sausage is browned and the peppers are barely cooked through, about 4 to 6 minutes. Remove from heat and drain any excess grease.

Cheese Mixture Preparation

In a bowl, combine the cream cheese, cooked chorizo mixture, shredded Monterey Jack cheese, shredded sharp Cheddar cheese, and sour cream. Mix well to ensure all ingredients are evenly distributed.

Transfer to Baking Dish

Transfer the cheese mixture to a shallow, heat-proof baking dish, spreading it evenly across the bottom.

Broiling the Dip

Set the oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil on high until the dip is browned and bubbly, approximately 5 to 6 minutes. Watch carefully to prevent burning.
