Description

These vegan meringues are a real treat! Preparing them is simpler than you think, just a little patience and the help of our trusted Thermomix®. Aquafaba, the cooking water of chickpeas, is the secret ingredient that makes them light and fluffy. Perfect for ending a meal with a sweet and delicate note, or to enjoy with a cup of tea. The long cooking at low temperature makes them crunchy on the outside and soft on the inside. Ideal for those following a vegan diet or for those who simply want to try something new and surprising. An inexpensive dessert for everyone!

Ingredients (3 ingredients)

  • 1 piece Aquafaba
  • 0.2 kg Icing sugar
  • 1 tsp Lemon juice

Preparation (5 steps)

Prepare aquafaba

The aquafaba must be very cold. If using the preservation water from pre-cooked chickpeas or the water in which the chickpeas were boiled after soaking them, let it rest in the refrigerator for at least one night.

Whisk aquafaba

Put the aquafaba in the bowl with the lemon juice and whisk with the butterfly for 5 Min./Stufe 3.5, until it becomes frothy.

Add icing sugar

Thermomix® Setting
8 min/Speed 3.5

Add the icing sugar a little at a time and continue whisking with the butterfly for 8 Min./Stufe 3.5, until the mixture is perfectly whipped and forms a tuft on the butterfly.

Form meringues

Transfer the mixture into a piping bag. Preheat the oven to 100° C. Line a baking sheet with parchment paper and, giving a circular motion to the piping bag, form the meringues of the desired size.

Bake meringues

Bake the meringues and cook for about 3 hours. They must dry completely. Then let them cool completely before consuming.
