This stewed chicken with tomato and onion is a comforting and flavorful dish, perfect for enjoying with family.   • 3 piece large tender onions
  • 6 clove garlic
  • 1 piece chopped chicken

Preparation of the vegetables

Wash the 3 ripe tomatoes. Remove the first layer from the 3 large tender onions. Chop the tomatoes and onions into wedges about a finger thick. Peel the 6 cloves of garlic and cut them into slices.

Brown the chicken

In a pan with olive oil, brown the 1 chopped chicken until golden brown. Season with salt and pepper to taste.

Sauté the vegetables

Remove the chicken from the pan and reserve. In the same pan with oil, add the tomatoes, onions and garlic. Sauté the vegetables until they are soft, approximately 15 Min./120°C/Stufe 1.

Stew the chicken

Incorporate the browned chicken into the pan with the vegetables. Add the 70 ml of cognac and 200 ml of water. Cook over low heat for 30 Min./100°C/Stufe 1.

She, with her always stained apron and a warm smile, prepared this stew with love and patience. It was not a sophisticated recipe, but the taste was unmatched, a warm hug on a cold day. The key to this dish lies in the quality of the ingredients and the cooking time. Ripe, juicy tomatoes with an intense flavor are essential for the sauce. We look for garden tomatoes, those that smell of sun and earth. The tender onion, sweet and soft, caramelizes slowly during the sauté, providing a subtle sweetness that balances the acidity of the tomato. The garlic, thinly sliced, infuses a penetrating and delicious aroma. The chicken, preferably cut into pieces of similar size to ensure even cooking, must be of good quality, with skin to add juiciness to the stew. To prepare this dish with Thermomix®, the process is greatly simplified. First, we chop the vegetables in the bowl, programming a few seconds at speed 5. Then, we sauté the vegetables with olive oil at Varoma temperature, speed 1, for about 15 minutes. Meanwhile, we brown the chicken in a separate pan, seasoning with salt and pepper to taste. Once the vegetables are soft and slightly caramelized, add the chicken to the Thermomix® bowl, along with the cognac and water. We cook at 100°C, speed 1, for 30 minutes, making sure the chicken is tender and the sauce has thickened. If you are looking for a vegetarian or vegan version, you can substitute the chicken with seitan, firm tofu or even cooked chickpeas. In this case, add the legumes or meat substitute at the end of cooking, so they do not fall apart. To give it a different touch, you can add spices such as sweet or smoked paprika, herbs of Provence or a pinch of cumin. This stewed chicken is delicious accompanied by homemade French fries, crispy on the outside and tender on the inside. It also combines perfectly with white rice, couscous or even mashed potatoes. A good crusty bread for dipping in the sauce is essential. If you have leftover stewed chicken, you can store it in an airtight container in the refrigerator for a maximum of 3 days.
