Description

This white bean stew with marinated pork is a comforting and flavorful dish, perfect for cold winter days. The combination of creamy beans with marinated pork, slowly cooked until tender, is simply delicious. I have been preparing this dish for years and it is always a success at home. White beans are cooked with fresh vegetables, which gives a touch of sweetness and depth to the stew. The marinated pork, with its intense and spicy flavor, perfectly complements the smoothness of the beans. It is an ideal dish to share with family or friends, and can be prepared in advance so that the flavors mix even more. A traditional dish that will transport you to grandma's kitchen!

Ingredients (12 ingredients)

  • 500 gramos White beans
  • 2 piece Medium potatoes
  • 1 piece Leek
  • 1 piece Onion
  • 1 piece Red pepper
  • 3 clove Garlic
  • 3 piece Carrots
  • 600 gramos Marinated pork ribs
  • 1 piece Marinated pork knuckle
  • 1 piece Marinated pork ear
  • 1 pinch Salt
  • Olive oil

Preparation (9 steps)

Initial preparation of the beans and meat

The night before, soak the white beans in a container covered with twice the amount of water. In another container, soak the pork ribs, pork knuckle and marinated pork ear to remove excess marinade.

Cooking the beans

Thermomix® Setting
45 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

The next day, drain the beans. Pour the beans into the Thermomix bowl. Add water to cover the beans, a pinch of salt, half an unchopped onion, two peeled and whole carrots, and two peeled garlic cloves. Program 45 Min./100°C/Reverse direction/Spoon speed.

Cooking the meat

While the beans are cooking in the Thermomix, put the marinated pork ribs, pork knuckle and pork ear in a pot with fresh water and cook until tender. Reserve the meat cooking broth.

Preparation of the vegetables

Finely chop the leek, the remaining half onion and the red pepper. Peel and cut the potatoes into mirepoix (small dice). To book.

Vegetable sauté

Pour a splash of olive oil into a frying pan and sauté the leek, onion and pepper until they are poached. To book.

Preparation of the vegetable sauce

Thermomix® Setting
30 seg./Velocidad 10

Remove the onion, garlic and carrots from the Thermomix bowl. Add the cooked vegetables to the Thermomix bowl along with a little of the bean cooking water. Crush 30 sec./Speed 10.

Incorporating the sauce and stir-fry

Thermomix® Setting
15 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Pour the crushed vegetable sauce and the vegetable stir-fry into the Thermomix bowl with the beans. Program 15 Min./100°C/Reverse direction/Spoon speed.

Add the potatoes

Thermomix® Setting
20 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add the potatoes cut into mirepoix to the Thermomix bowl. Program 20 Min./100°C/Reverse direction/Spoon speed. Correct the salt if necessary. If the beans run out of water, add broth from the meat cooking.

Serve

Once the beans are tender, add part of the cooked meat to the stew to make it juicier. Serve hot.
