Description

This beef stew gardener style is a comforting and flavorful dish, perfect for cold days. The beef is slowly cooked in a rich, thick sauce, along with onion, red pepper, and garlic, creating a delicious combination. The touch of white wine and sweet wine gives it a special aroma. I usually prepare it when I have guests because it can be left cooking over low heat and in the meantime I enjoy the company. A dish that always triumphs at home! Furthermore, it is a very versatile recipe, you can add other vegetables such as carrots or peas.

Ingredients (14 ingredients)

  • 500 gr diced beef
  • 0.5 piece onion
  • 0.33 piece large red pepper
  • 2 clove garlics
  • 2 hoja bay leaf
  • 200 ml crushed tomato
  • Evoo
  • 0.5 container white wine
  • 0.5 container sweet wine
  • Salt
  • Black pepper
  • La Vera paprika
  • 1 cucharadita erythritol
  • 0.33 cucharadita meat extract

Preparation (7 steps)

Chop vegetables

Add to the bowl 1/2 onion, 1/3 large red pepper and 2 cloves of garlic. Chop for 3 seconds at speed 5.

Vegetable sauce

Add extra virgin olive oil (Evoo) to the bowl together with the chopped vegetables and 2 bay leaves. Sauté for 8 minutes at 120°C at speed 1.

Sear the meat

Salt and pepper the 500 gr of diced beef and sear in a pan with a little extra virgin olive oil over high heat until it changes color. Add a little La Vera paprika.

Add wine and evaporate alcohol

Add the seared meat to the bowl. Incorporate 1/2 glass of white wine and 1/2 glass of sweet wine. Program 5 minutes at Varoma at speed 1, without the measuring cup, so that the alcohol evaporates.

Cook over low heat

60 min/212°F/Velocidad cuchara 100 Reverse

Add 200 ml of crushed tomato and 1/3 teaspoon of meat extract. Program 60 minutes at 100°C at spoon speed, turn to the left.

Reduce the sauce

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

If the sauce is very liquid, program 10-15 more minutes at Varoma, speed 1, without the measuring cup, until the sauce is to your liking.

Adjust acidity

Thermomix® Setting
10 sec/keine/Speed 2

Add 1 teaspoon of erythritol or a sweetener tablet to remove acidity. Mix for 10 seconds at speed 2.
