Description

This chicken stuffed with prawns and porcini mushrooms is a dish that I often prepare when I want to amaze my guests. The combination of tender chicken with the delicate flavor of prawns and the intense aroma of porcini mushrooms is simply delicious. The preparation takes a little time, but the end result is absolutely worth it. Perfect for a special dinner or a Sunday family lunch. It can be prepared in advance and baked just before serving. A true triumph of autumn flavors!

Ingredients (8 ingredients)

  • 1 piece Chicken
  • 300 g Prawns
  • 80 ml Brandy
  • 500 g Potatoes
  • 200 g Porcini mushrooms
  • 0.5 piece Lemon
  • 50 ml Extra virgin olive oil
  • 1 pinch Salt

Preparation (10 steps)

Preparation of the chicken

Thoroughly clean the chicken, removing any residual feathers. Lightly singe for a more thorough cleaning.

Marinating the chicken

Transfer the chicken to a large bowl or baking dish. Pour about 50 ml of brandy into the chicken's belly to flavor it.

Marinating the prawns

In another bowl, combine 300g of peeled and cleaned prawns. Marinate the prawns with 30 ml of brandy and the grated zest of half a lemon. Mix well and let marinate for at least 15 minutes.

Preparation of the potatoes

Peel and rinse 500g of potatoes. Cut the potatoes into approximately 1 cm dice.

Preparation of the porcini mushrooms

Thoroughly clean 200g of porcini mushrooms. Separate the caps from the stems. Dice the stems and thinly slice the caps. Set aside the sliced caps.

Preparation of the baking pan

Grease a baking pan with 30 ml of extra virgin olive oil. Evenly distribute the diced potatoes and diced porcini mushroom stems on the baking pan.

Stuffing the chicken

Stuff the inside of the chicken alternating the marinated prawns and the sliced porcini mushroom caps. Salt the inside and outside of the chicken with a pinch of salt.

Arrangement in the baking pan

Create a space in the pan by moving the vegetables and place the stuffed chicken in the center of the pan.

Baking in the oven

Bake the baking pan in a preheated oven at 190°C for 50 minutes - 1 hour, or until the chicken is golden brown and cooked through.

Service

Remove the chicken from the oven, cut it into pieces and serve it hot accompanied by the potatoes and porcini mushrooms cooked in the baking pan. Add a drizzle of raw extra virgin olive oil before serving.
